Why are Bellair's peppers popping off this year?!?! Glad you asked.

First we rotated the chickens through the fields in which they are planted the year prior. Then we used a microbial soil primer to introduce beneficials before planting. After planting, we did a 1x/week foliar spray that has all the important micronutrients to support proper growth and development of the plant. We especially focused on calcium and making sure the plant is properly photosynthesizing. Farming takes trouble shooting and problem solving. It ain't easy and if your wondering what you are paying for--it's this and all the labor that goes into starting the plant from seed, nurturing, planting, and harvesting as well!

Pepper Season = Hot Sauce Season!

This week we have bulk deals on Jalapeños & Serranos, online and at the Barn Store, if you're making your own!

Bellair hot sauces are cooked, canned and shelf stable. We make everyone's favorite GREEN sauce from jalapenos and serranos, as well as our signature RED milder sauce from carmens and anaheims, and finally, an ORANGE sauce made with sweet peppers and habaneros. It is about the same heat level as the green (a solid "medium"). All of these sauces include Bellair garlic and local honey to give them that sweet heat flavor. The only non-local ingredient is the vinegar!

After scouting the fall crops and seeing some...... challenges...... it was nice to look into the tunnels and find not one but TWO succulent surprises!

Both these specialty greens are listed in the online store and we will be harvesting small quantities for our Pen Park, Barn and IX locations this weekend.
