Tupelo honey is made from the Tupelo tree found only on remote Southeastern rivers - and blooms for a few days every April. The Apalachicola River in the Florida Panhandle is the center for tupelo honey. In northern Florida, beekeepers keep beehives along the river swamps on platforms or floats during tupelo bloom to pro

duce certified tupelo honey. Tupelo honey has such a high ratio of fructose to glucose that it does not crystallize, so its beauty and flavor is long lasting. This wind and rain coming in from the gulf today will probably not be too kind to the Tupelo blooms on the Chatahoochee River. We are just praying that the bees will 'make honey while the sunshines' this morning and that the blooms will be able to hang on to the trees and withstand the weather. The Tupelo season is very short anyway, and this weather could mean disaster. Here's to brighter days and flowing honey!!!

Thanks to the good people in Chipley for loving our Deep South Tupelo honey!!! The Mainstreet Market in Chipley is selling honey as fast as someone can get hot biscuits out of the oven! It is fun to see our name on the scrolling marquee in front of their store!
