Tupelo honey is as unique to the South as Mint Juleps and Shade Leaf To***co. Tupelo honey is made from the Tupelo tree found only on remote Southeastern rivers - and blooms for a few days every April. The Apalachicola River in the Florida Panhandle is the center for tupelo honey. In northern Florida, beekeepers keep beehives along the river swamps on platforms or floats during tupelo bloom to produce certified tupelo honey. Tupelo honey has such a high ratio of fructose to glucose that it does not crystallize, so its beauty and flavor is long lasting.
