This wheel of Fat Cat from Birchrun Hills Farm is phenomenal and I thought you should learn about it today.

What is a washed rind cheese? A wheel of cheese can be washed with salt brine, beer, wine, or spirits to yield a stinky or smelly cheese. The wash makes the rind of the cheese more hospitable for specific bacteria. You'll know you're looking at a washed rind if it's an orangish or reddish color and smells like a gym bag. In an unofficial study that I've conducted the past three years, I can say with confidence that the most famous washed rind is Limberger.

I was thrilled with this wheel because it's bearing a fudgy paste and beautiful cream line, which I don't often see on washed rind cheeses. It's a semi-soft cheese, meaning it will melt well. The flavor is earthy and tangy, with a grassy finish. I want to try this cheese on a sandwich with pastrami and thin sliced red onions. I recommend pairing this with strong flavored foods like olives or pickled vegetables.

🔔 We’re kicking off something new this season—a Table Decorating Competition on the first Friday of each month, starting this Friday, May 1st as we celebrate May Day on the farm.

🍽️ Bring your creativity and set your own table for the evening. Think table linens, placemats, cheese boards, decorations, glassware, cheese knives.
Tables are limited and first come, first serve, so we recommend arriving early to claim your spot (or create your own picnic setup!).

🏆 Judging will take place at 6:00 PM sharp, and the winner will receive a gift certificate for a free grazing board, a free bottle of wine from Le Garage Winery and a flower bud jar from Country Lane Flowers.

‼️No outside food or alcohol permitted

Perfect weather on tap for Happy Hour this Friday!!

This coming Friday!!!!!!!!!! Mark your calendars! Big musical cow fun Wine, Cheese, Cows and Dave Loves Donna Hills Farm

The coolest cheesiest happy hour around! Join us for wine, cheese, and other delicious fare (fresh homegrown grilled burgers, gourmet grilled cheese, etc.), while we sing popular songs from the last few decades mixed with our original tunes - Dave playing his smokin' guitar and harmonica, Donna on guitar and mandolin, lots of harmony - rock, folk, blues, & country! And harmony guest star Jennifer! We plan to play lots of dance tunes and tunes to sing along with!

You can order a beautifully arranged cheese tray ahead of time birchrunhillsfarm.com/ or pick out something when you arrive. The wine bus will be there! So will the cows! And lots of cool people. Come early and grab a table or bring a blanket and picnic.
