Farmer’s Market bounty…
One of the best things! Broad beans from Z4Zero Farm, tomatoes from berrybrookfarm, delicious! Chanterelle recipe below.
Quick saute chanterelles:
Chanterelles 1/4-1/2lb
Avocado oil 2-4 tbsp
Butter 2-4 tbsp
Garlic 2-4 cloves, minced
Lemon (optional)
Salt & pepper to taste
Clean chanterelles- brushing, rinsing, soaking are all possible methods, depending how clean they are; dry with a paper towel & slice large ones in half. Heat oil to a shimmer over high heat. Use a cast iron skillet if you have one. Add mushrooms and saute, turning and stirring mushrooms, for about 5 minutes or until you have a nice sear (lower heat to medium high as needed). Add garlic, then butter. Turn heat down to medium and continue to stir and sauté mushrooms until garlic is browned and mushrooms are beautifully golden, an additional 3-5 minutes. Salt and pepper to taste, a squeeze of a fresh lemon wedge if you like. Enjoy!
