Our version of Pollo Poblano 🍗🫑

Juicy roasted chicken, creamy roasted poblano sauce, yellow rice, and fava beans/spinach sautéed in lemon butter

I remember someone making this for staff meal at one of my first kitchen jobs when I was 19. They made it more as a stew, with strips of chicken and peppers cooked in the sauce and served with white rice. Still delicious!

Thanks so much to everyone who placed orders for pastries over the weekend! Also thanks so much to everyone who came out to Standard Meadery for a cubano and some cake! Hope everyone who celebrated, had a great holiday. 🐰
