Malaysian-Style Satay Chicken Curry with Creamy Peanut Coconut Sauce
Ingredients:
1 1/2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
2 tablespoons vegetable oil
1 medium yellow onion, finely chopped
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons Malaysian curry powder
1 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1 red bell pepper, sliced
1 cup coconut milk
1/2 cup smooth natural peanut butter
1 cup chicken broth
2 tablespoons soy sauce
1 tablespoon brown sugar
1 tablespoon fresh lime juice
1 teaspoon sambal oelek or chili paste
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh cilantro
2 tablespoons roasted peanuts, roughly chopped
Lime wedges, for serving
Directions:
Heat the vegetable oil in a large skillet or Dutch oven over medium-high heat.
Season the chicken pieces lightly with salt and black pepper. Add the chicken to the hot skillet and cook for 5-7 minutes, turning occasionally, until golden brown on the outside. Transfer the chicken to a plate.
Reduce the heat to medium. Add the chopped onion and sliced red bell pepper to the same skillet. Cook for 4-5 minutes, until the vegetables begin to soften.
Add the minced garlic and grated ginger. Cook for 30-60 seconds, stirring constantly, until fragrant.
Add the Malaysian curry powder, turmeric, cumin, and coriander. Stir for about 30 seconds to toast the spices and release their aroma.
Return the chicken to the skillet. Pour in the coconut milk and chicken broth, then stir in the peanut butter, soy sauce, brown sugar, and sambal oelek.
Bring the mixture to a gentle simmer. Reduce the heat to low, cover partially, and cook for 15-20 minutes, stirring occasionally, until the chicken is tender and the sauce has thickened.
Stir in the fresh lime juice. Taste and adjust the salt, sweetness, or chili heat according to your preference.
Spoon the creamy satay chicken curry into serving bowls. Garnish generously with fresh cilantro and chopped roasted peanuts.
Serve hot with steamed jasmine rice, warm roti, or Malaysian-style flatbread, with fresh lime wedges on the side.
