Maybe more dinners like this will convince my husband to let me be a SAHM! 🤣🫣😉
I love looking up new recipes and then taking ideas from a few of them and making it my own thing! This pasta wash a mash up of Cowboy Butter Pasta & Jalapeno Popper Pasta and it turned out soooooo good! 😋🌶️🧈🍗🍝
Ingredients:
2 Large Chicken Breasts, cut into 1” cubes
1/2 Bell Pepper (Any Color), diced
1/2 onion, diced
4-6 Jalapeños, sliced into rings
1 Stick of Butter
1-2 Tbsp Minced Garlic
Paprika
Red Pepper Flakes
Italian Seasoning
Salt & Pepper
1 1/2 cups Heavy Cream
1/2 brick Cream Cheese, softened
1/4 cup Grated Parmesan
2 Tbsp Dijon Mustard
1 Tbsp Lemon Juice
2 tsp Worcestershire
1 tsp Sugar
Instructions:
1. On medium-high heat, melt 1/4 stick of butter in a large pan. Once melted (don’t let it burn), add in your diced chicken and sprinkle with paprika, red pepper flakes, Italian seasoning, salt and pepper. (Measure seasonings with your heart!) Allow the chicken to cook/brown (roughly 10 minutes).
2. While your chicken is cooking, bring a pot of water to a boil for your pasta of choice. Once water is boiling, add your pasta and cook according to the package instructions.
3. After chicken is cooked, remove it from the pan and set it aside. In the same pan with the remnants of the chicken, add another 1/4 stick of butter and melt (medium-high heat).
4. Once the butter is melted, add in your chopped veggies and the same seasonings you added to the chicken and sauté. Remove the sautéed veggies when done and set aside.
5. In the same pan (again!), add the remaining 1/2 stick of butter, melt it and then add the minced garlic. Allow the garlic to become fragrant, but not burnt.
6. Turn your heat down to medium-low and add in heavy cream, cream cheese, grated parmesan, Dijon mustard, lemon juice, Worcestershire and sugar and whisk until it has formed a sauce.
7. Once your sauce is ready, add your chicken, sautéed veggies and pasta back in.
8. Serve with garlic bread, salad, or whatever your heart desires!
