5lbs Chuck Roast
Wagyu Beef Tallow
Taco & Fajita Seasoning
𝐶𝑜𝑛𝑠𝑢𝑚𝑒:
Half Red Onion, sliced
2 Cinnamon Sticks
1 Bunch Cilantro
10 Garlic Cloves
2 Red Jalapenos
10 Dried Guajillo Chillies
15 Dried Chile De Arbol
4 Bay Leaves
1/2 cup Lime Juice
2 Beers @modelo
12 cups Beef Broth
2 cups Sofrito (don’t be lazy, make it!)
3tbsp each of Chili Powder, Cayenne Pepper, Smoked Paprika, Chili Lime Seasoning, Red Pepper Flakes and @station1923 Honey Smoke
Smoked the Chuck Roast and Consume in separate pans on 335f using Pecan Chunks for 3 hours, combined the 2 and smoked for another hour. Covered with foil and Wagyu Beef Tallow and put back on until shreddable, about another hour.

INGREDIENTS
4 tbsp SCP Lard All-Purpose Shortening
3.5 cups all-purpose flour
2.5 cups sugar
3 tsp baking powder
1 cup soaked raisins in whiskey
1 tsp baking soda
1 tsp salt
2 tsp caraway seeds
1 pinch grated nutmeg
2 cups buttermilk
2 eggs
1 tsp vanilla extract
STEP-BY-STEP
Preheat oven to 350°F. Thoroughly mix and sift your dry ingredients. Mix all wet ingredients separately, then combine with dry. Add the whiskey soaked raisins. The batter should be too thick to pour, but too wet to knead. Spoon out with spatula into a lard-greased 6”-9” baking dish, and cut an “x” into the top.
Bake for 30 minutes to an hour, depending on the size of your dish (the internal temp should be around 210°F). Let cool on a wire rack. Best enjoyed hot with plenty of butter.

SCP Wagyu Beef Tallow, 40g
Bread Flour, 750g
Whole Kernel Wheat, A handful
Sea Salt, 18g
Warm Water, 480g
Barley Malt Syrup, 7g
Instant Dry Yeast, 7g
Combine warm water, malt syrup and yeast, allowing them to activate for a few minutes.
Add to your flour and salt. Mix with a spatula until all dry flour is incorporated. Add tallow and continue to mix.
When it forms a ball, turn out onto a floured surface and begin to knead for 10 minutes, or use a dough hook attachment on a mixer on speed 2.
Place in a tallow greased bowl, cover with plastic and allow to rise until doubled in size (~2hrs). Turn out dough and divide into pieces. Cover and rise for an additional hour.
Stretch, add your sauce and toppings, bake, and enjoy the delicacy of pizza.
