“I started with a 4-bone ribeye roast by removing the bones & tying them back on to keep the added bone flavor with the ease of slicing after. I then air dried it in the fridge for 2 days before covering it with a Wagyu Beef Tallow garlic herb mixture and smoking at 225º on my Timberline 1300 for a little over 4 hours until it hit 125º internal. Let it rest for 45 mins, cranked the heat up to 450º and crisped up the outside for about 8 minutes.” -

🍋 Cook pasta in seasoned water
🍋 Heat a metal bowl with boiling pasta water, then remove
🍋 Add cooked pasta to same metal bowl with a scoop of pasta water
🍋 Add juice of 1 lemon & 1 scoop of Iberico Rendered Lard to your pasta
🍋 Stir continuously until you have a creamy texture
🍋 Cover with finely grated Parmesan Reggiano before serving

Savor the flavors of spring with a fresh herb infusion using our Wagyu Beef Tallow. Perfect for basting or enhancing your favorite meats, this rosemary and mint infusion is incredible on anything:

🌱Slightly bruise herbs to release oil.
🌱Add herbs to a sterilized bottle or jar.
🌱Heat Wagyu Beef Tallow in pan, on low heat, until warm.
🌱Carefully pour Tallow into bottle/jar, over herbs. Let cool.
🌱Strain herbs from oil
🌱Allow to infuse over night, and use in the next two days

🦐 Creole seasoning

🦐 Freshly-baked French bread
🦐 Lettuce, tomato, pickles
🦐 Tangy remoulade

Cooking Instructions:
👉 Dunk shrimp in spicy buttermilk, then season in a combination of cornmeal and flour before flash-frying in Wagyu Beef Tallow at 375°F until gold brown. Let cool before assembling!

5lbs Chuck Roast
Wagyu Beef Tallow
Taco & Fajita Seasoning

𝐶𝑜𝑛𝑠𝑢𝑚𝑒:
Half Red Onion, sliced
2 Cinnamon Sticks
1 Bunch Cilantro
10 Garlic Cloves
2 Red Jalapenos
10 Dried Guajillo Chillies
15 Dried Chile De Arbol
4 Bay Leaves
1/2 cup Lime Juice
2 Beers
12 cups Beef Broth
2 cups Sofrito (don’t be lazy, make it!)
3tbsp each of Chili Powder, Cayenne Pepper, Smoked Paprika, Chili Lime Seasoning, Red Pepper Flakes and Honey Smoke

Smoked the Chuck Roast and Consume in separate pans on 335f using Pecan Chunks for 3 hours, combined the 2 and smoked for another hour. Covered with foil and Wagyu Beef Tallow and put back on until shreddable, about another hour.

Here in Chicago, we take St. Patrick’s Day snacking very seriously. You can find us eating Irish Soda Bread and sipping on a cold pint of Guinness when the 17th rolls around 🍀

INGREDIENTS
4 tbsp SCP Lard All-Purpose Shortening
3.5 cups all-purpose flour
2.5 cups sugar
3 tsp baking powder
1 cup soaked raisins in whiskey
1 tsp baking soda
1 tsp salt
2 tsp caraway seeds
1 pinch grated nutmeg
2 cups buttermilk
2 eggs
1 tsp vanilla extract

STEP-BY-STEP
Preheat oven to 350°F. Thoroughly mix and sift your dry ingredients. Mix all wet ingredients separately, then combine with dry. Add the whiskey soaked raisins. The batter should be too thick to pour, but too wet to knead. Spoon out with spatula into a lard-greased 6”-9” baking dish, and cut an “x” into the top.

Bake for 30 minutes to an hour, depending on the size of your dish (the internal temp should be around 210°F). Let cool on a wire rack. Best enjoyed hot with plenty of butter.
