Step 1: Make pastrami. (Yes, from scratch. Yes, it's worth it. No, we won't apologize.)

Step 2: Chunk up the deuce - slather every single side of your bread with Giardonnaise®. All of them. Trust the process.

Step 3: Stack more pastrami than you think is reasonable. Then add more. We're not here to be reasonable.

Step 4: Swiss cheese. Sauerkraut. Don't skip either. This isn't a negotiation.

Step 5: Grill it. On a pan, on that flat top you won't stop talking about — whatever. Just make it golden.

Step 6: Take approximately 400 photos. Your mom will ask to see your vacation pictures, get immediately frustrated by the sandwich content, hand your phone back, then realize she's hungry.
