CariΓ±o Latin-inspired tasting menu with a late night taco Omakase. NOW OPEN!

The sounds of service in 12 seconds. The hands behind every course. The quiet precision, the controlled chaos, and the countless details that bring an evening at CariΓ±o to life.

No soundtrack needed. Just another night doing what we love.

Sound on. πŸ”Š

Our study of masa takes a detour into the glass.

Today, we’re traveling a little farther south to Peru, where Chicha Morada celebrates corn in another form: a traditional non-alcoholic beverage made with dried purple corn and spices.

Beverage Director Raymond Medina’s interpretation arrives with a little Ramos Gin Fizz flair. A nod to Peru, through a distinctly CariΓ±o lens.

Observing Sober October? Ray has something for you.

January and February reservations are now open. We’ll be taking our winter break during the first two weeks of January, then returning to welcome you back to the table.

Joseph’s culinary roots run through Southwest Michigan’s fruit belt, where fishing, picking blueberries, and working in local diners formed an early connection to food and hospitality. His career took him to Blackbird (IYKYK!) in Chicago, Daniel in New York, and Restaurant A.T. in Paris before bringing him home to Michigan with a deeper appreciation for the ingredients he grew up around.

At Echelon, that connection informs his approach: local ingredients explored through creativity and modern technique. In a few weeks, he brings that perspective to CariΓ±o to cook alongside Chef Norman and our team for the next π˜›π˜’π˜€π˜°π˜΄ 𝘞π˜ͺ𝘡𝘩 𝘍𝘳π˜ͺ𝘦𝘯π˜₯𝘴 chef series at the counter.

Two chefs with plenty to bring to the table. We’re looking forward to seeing what they cook up!

Much of what happens during service begins long before a course reaches the counter.

Corn is nixtamalized and ground in-house. Masa is worked throughout service. Fermentation, preservation, fire, and countless small adjustments happen behind the scenes, often for details that may disappear in a bite or two.

That is part of the point.

Chef Norman has built CariΓ±o around an uncompromising approach to technique, but also around curiosity. The idea that something familiar can still be questioned, pushed further, taken apart, and rebuilt into something entirely our own.

Night after night, our team comes back and does it all again. Not because it’s the easiest way. Because we believe it’s worth it.

Reservations through the end of December are available through our website and OpenTable.

December at CariΓ±o brings us into one of our favorite times of year, when Chicago settles into winter, celebrations fill the calendar, and evenings around the counter feel just a little more special.

General Manager Camille has released the December reservations, which are now available on OpenTable and on our website. For those hoping to join us sooner, a small handful of November reservations remain.

We look forward to welcoming you to CariΓ±o this holiday season.

On September 17, CariΓ±o welcomes Chef Sieger Bayer of bar Berria for a one-night collaboration with Chef Norman. Known for the intimate underground dinners that have shaped barBerria, and most recently seen by audiences across the country on Bravo Top Chef, Sieger brings a style of cooking that is thoughtful, ambitious, and deeply personal.

For π˜›π˜’π˜€π˜°π˜΄ 𝘞π˜ͺ𝘡𝘩 𝘍𝘳π˜ͺ𝘦𝘯π˜₯𝘴, that creativity will extend beyond the menu. Sieger has been working with local glass and ceramic artists to create one-of-a-kind serving vessels specifically for the evening, adding another layer of artistry to a menu that brings his perspective together with Chef Norman’s through the lens of CariΓ±o’s late-night taco omakase.

Some cocktails are built around familiar flavors, a classic recipe structure. Others begin with tradition.

Ray’s newest creation draws inspiration from 𝘡𝘦𝘫𝘢π˜ͺ𝘯𝘰, the fermented masa beverage enjoyed throughout western Mexico for generations. House-made yellow masa, tepache liqueur, pineapple, orgeat, and Charanda Agricole Rum come together in a cocktail that is at once bright, savory, and deeply layered, finished with a tortilla chip crumble that brings it all full circle.

Now poured at CariΓ±o. Link in bio to reserve Oct+Nov.
