For many Polish families, summer has a very particular smell: the smoke of an ognisko. 🔥🇵🇱

There is one herb that turns up in almost everything in a Polish kitchen, and it is dill.🌿🌱🥒

It goes over young potatoes with butter, enough of it that the potatoes turn green at theedges. It goes into the jar with the cucumbers, whole stalks, flowers and all. There is asoup made almost entirely of it. It goes over fish, through sauces, onto anything with sour cream anywhere near it.

Maybe you remember a bunch of it standing in a glass of water on the windowsill all
summer, because somebody bought more than they needed and would not let it go to waste.

In a lot of kitchens dill is a garnish. In a Polish one it is an ingredient, and often the
thing that makes a dish taste like home.

Pierogi have been on Polish tables for centuries, and one of the best things about them is how little stands between the freezer and dinner when you order them pre-cooked from Polana!

They arrive frozen and go straight into the freezer, where they'll keep until the evening you need them. No thawing, nothing to plan ahead.

When that evening comes: a big pot of water, a teaspoon of salt, a slow boil. The pierogi go in frozen and cook uncovered for two to three minutes, and they let you know when they're ready by rising to the top.

From there most Polish households move them into a pan with a little butter over low heat, turned once, until both sides are golden. It takes a few minutes longer and it's how most people prefer them.

For the savory ones, half an onion cooked gently in butter until it's soft and golden, poured over and tossed through, with sour cream and chives on the side.

For the sweet ones, melted butter, then cold sour cream and a spoonful of sugar over the top. It's how strawberry and blueberry pierogi have always been served in Poland.

Every Polish family has a version of this. You stop by for coffee. You stay an hour. You leave carrying a canvas bag with six jars in it and enough food to skip grocery shopping that week.

None of the jars match. There's a honey jar with soup in it, a pickle jar holding jam, something that used to be mustard and now definitely isn't. Nobody in a Polish kitchen has ever thrown out a jar in their life, and every one of them was being kept for exactly this moment.

The labels are masking tape and her handwriting. No date. Just the word, in a hand you'd recognize anywhere.

You say you don't need any of it. She hears you perfectly. The bag fills anyway, and then you drive home listening to glass knock against glass on every turn.

Here's the part that takes years to work out: she wasn't giving you food. Polish grandmothers of that generation didn't always say the soft things out loud. They filled a bag instead and trusted you to understand eventually.

Put a Polish cookout and an American cookout side by side and the differences show up fast -

There are no burgers. There is no barbecue sauce anywhere on the property. The bread isn't a bun, it's a thick slice of rye set at the cooler edge of the grate to catch whatever drips off the sausage above it, and that slice frequently turns out to be the best thing anyone eats all day.

The sausage gets scored before it goes on, so it opens as the fat renders. It cooks off to the side rather than over the hottest coals, because rushing it is the one genuine mistake you can make.

And whatever ends up on the table, something sour goes beside it. Pickles, sauerkraut, horseradish sharp enough to make somebody's eyes water.

None of it is complicated. It's just what many Polish backyards worked out and never saw a reason to change.

There’s a word for it. Dokładka. The second helping, and in a Polish home it was never really offered so much as administered.

You'd say no. She'd hear you perfectly well. The spoon would already be moving, and by the time you'd finished explaining that you were full, there'd be another cabbage roll on your plate coated with a generous amount of tomato sauce you definitely did not ask for.

And then you'd eat all of it, because it was the best thing you'd had all week, and because she was right, which was the part nobody ever said out loud.

That's how a Polish grandmother said the things she wasn't going to say directly. Not with words. With a plate you couldn't refuse.
