Pork Belly
#1 w/ lentils, bacon, sage gastrique, mournay $4.00/ 7
#2 Confit w/ polenta, pork jus, roasted peach (fruit), mint $4.00/7
#3 Pork belly hash: Kitchen sink $3.50

Foodlab+Kitchen plans to open two Fast Casual concepts in the next calendar year. One of them is SmokeShop:

MENU
Option: Cut or not on the bias and against the grain

STEP 1: Pick a Meat: $8-10

( Meat is sous vided and cold smoked, or fried, ready to go. Steak is finished on wood )

Wood smoked Pork chop, Fried sage, gray or honey butter

fried chicken (roulade)- gravy or honey w/ sage brown
butter + hot sauce

Flank/skirt steak wood with blue cheese foam or horseradish foam

Blackened catfish w/ lemon old bay emulsion (foam)

Short rib w/ gremolata (lemon zest, garlic, parsley, breadcrumb )

Smoked tofu, black rice cracker + mushroom puree
( foam)

STEP 2: PICK 2 SIDES $2-3
Sides:
Seasonal Salad,
Crumb macaroni w/ pork belly bits ( fried )
potato puree, + fries , +beef demi glace + merkts horse= poutine, elotes
slaw
fritters
blue cheese grit

Foodlab Kitchen is our new umbrella business: encompassing Under the Table and everything that has come after it: from restaurant concepts to these pies.
