Founder, meets with Chicago's mayor Brandon Johnson, and Cook County Board President Toni Preckwinkle at the Chicago Festival.

shared the story behind Jimmy’s Vegan Cookies, and our products, with the Mayor and his team. Both understand grassroots organizing and the role education plays in strengthening communities as former educators and community organizers. Mayor Johnson is from Austin, Chicago, and Jimmy is Oak Park/Austin, Chicago, two communities directly across the street from one another.

It was exciting to see both Mayor Johnson and Cook County Board President Preckwinkle with our Zero Sugar Vegan Cookie flavors: The Loaded Vegan and The Dark Berry Vegan.

Jimmy's Vegan was happy to have our Founder, Jimmy Prude, serve as a judge for the 2026 National NAACP ACT-SO Culinary Arts and Hospitality Management competitions in Chicago.

Jimmy Prude evaluated talented culinary competitors and heard hospitality teams present innovative business concepts designed to strengthen Chicago’s South and West Sides and lakefront.

Congratulations to the first-place team representing the NAACP Houston Branch, Unit #6183, for **The Junction**: A four restaurant food hall concept housing a local Chicago coffee shop while serving as a community anchor institution.

Additional congratulations to second-place team from Chalmette High School in Louisiana: Students Destiny B, Analeigh S, Mikaila C, and Adyson D, who earned second place for **Honua’s Table** open air lakefront concept.

We appreciate the chance to support opportunities that encourage young people to pursue culinary excellence, innovation, and entrepreneurship.

Founder Jimmy Prude Speaks with Chicago Mayor Brandon Johnson (Chicago Mayor's Office) at Chicago’s Pride South Side.

Their conversation was grounded in a shared connection to Chicago’s West Side: Mayor Brandon Johnson from Austin, Chicago, and Founder Jimmy Prude from Oak Park/Austin, Chicago, two communities next door to each other. They spoke about the communities that shaped them, their backgrounds in education and community organizing, and the importance of continuing to serve people through grassroots work while meeting the needs of people and community through business.

Jimmy’s Vegan was built with purpose: creating better-for-you, zero-sugar, gluten-free, keto-friendly vegan cookies for health-conscious, wellness-focused consumers and people living with Type 1 or Type 2 diabetes, while staying connected to the communities that continue to inspire our work.

We were excited to share Jimmy’s Vegan Cookies with Mayor Brandon Johnson and his team, and grateful for the opportunity to be part of a gathering centered on culture, community, and connection.

Jimmy's Vegan is proud to highlight our Founder, Jimmy Prude, for serving as a panelist at the NAACPACT-SO 2026 HUB panel discussion, “The Impact of ACT-SO: Olympics of the Mind,” held at Mccormick Place Convention Center in Chicago.

As a former ACT-SO participant, Jimmy shared how gifts and talents can become more than personal accomplishments, they can create space for community, inspiration, opportunity, and future leaders.

That belief is deeply connected to the work we do at Jimmy’s Vegan. Building a purpose-driven brand means creating something that people can connect with: a product, a mission, and a reminder that entrepreneurship can serve both people and community.

We are grateful to the NAACP and ACT-SO for continuing to cultivate spaces where young people can develop their talents, compete at the highest level, and see what is possible for their future.

A great way to close out our time at Plant to Plate Program.

In this clip, an attendee shares his thoughts on health, wellness, and the importance of having better-for-you snack options like Jimmy's Vegan Cookies available for people.

For Jimmy's Vegan, this was a great reminder of why we started and the many people who we continue to serve.

In this clip, Jimmy speaks with attendees about his early work as a community organizer, partnering with a nutritionist from the University of Illinois Chicago Extension to help residents better understand nutrition facts panels, ingredient labels, and some of the less familiar ingredients commonly found in food products.

Those early conversations around nutrition education, health awareness, and informed decision-making would later help shape the mission behind Jimmy's Vegan Cookies, a brand originally created to provide better snacking options for individuals living with Type 1 and Type 2 diabetes.

Community events like these give Jimmy's Vegan the opportunity to engage 1-on-1 with people, and also receive honest feedback from the very community he laucned Jimmy's Vegan Cookies from, and we love hearing what people think.
