Every brewery should have a house beer—a beer that says: this is who we are.
For us, that means brewing with a Franconian mindset: beer rooted in place, shaped by tradition, guided by craftsmanship, and made to be enjoyed round after round in good company.
Ours has always been Dovetail Lager.
And while “crispy bois” has become shorthand for “lager,” we’ve always believed there’s no single definition of what lager can or should be. Lager is not monolithic. In Franconia, lager is deeply individual—a reflection of the ingredients, the processes, the brewhouse, the cellar, the town, and the people drinking it. Our house flavor reflects who we are—not a one-size-fits-all idea of what lager should taste like.
Ten years in, Dovetail Lager remains at the center of what we do—but we’re still learning what it’s capable of. A few years ago, we began our Hopfenlager series—a chance to explore what happens when you give hops room to shine in a traditional lager framework.
What began as curiosity became one of our favorite things to explore: layer upon layer of hop character, from classic noble varieties to experimental hops still without names, added late in the coolship to preserve delicate aromatics while keeping bitterness soft and refined.
The result is our 10th Anniversary Lager—an elevated expression of our house beer: familiar in its drinkability—golden, malty, rich, and beautifully creamy, with layered complexity—yet deeper in hop character, carrying an unmistakable love letter to Tettnang: herbal, floral, peppery, elegant, and endlessly drinkable.
Dovetail 10th Anniversary Lager is available in 4-packs and draft in the taproom and around Chicagoland, and tonight Bill will tap a gravity keg around 6pm.
