Hop Butcher for the World

In his poem "Chicago," Carl Sandburg first refers to this great city as "Hog Butcher For the World."

And while the literal meaning behind that moniker has faded since the mid-twentieth century closing of the Union Stock Yards, it anchors and inspires our ethos in three meaningful ways:

For starters, we love hops. The variety of ways they can be used in brewing and the range of flavors and aromas that they bring to beer are vast and areas in which we enjoy experimenting heavily. No surprise then

that the word "hop" appears in our name and that the majority of our recipes begin with a specific variety or intuitive blend of hops in mind. How we are inspired by the "Butcher" portion of our namesake is thankfully less bloody than the history behind it, but there are a lot of butcher-esque traits that we do draw inspiration from. All of the ones we grew up around were approachable, dependable and visibly and vocally passionate about their craft. They'd take the time to get to know you, get technical when necessary and if you wanted it, help you find something or make a recommendation. That's who we aim to be, except with hops, yeast, water and grain in a brewery instead of a butcher shop and a meat-filled counter. Finally, at some point, you'll refer to us simply as "Hop Butcher" (and we're cool with that), but the "For The World" part is an important and meaningful element of our name. It inspires the ingredients we use and the personality behind the beers we brew: unique enough for the beer geeks, approachable enough for the newcomers. It guides who we work with and where our cans and kegs are distributed...and where they might someday be distributed.

LIQUID CURIOUS | 5.75% HAZED PALE ALE

Hopped with punchy 2025 hand selected Citra, Krush & Fresh Waimea Cold Pressed Hop Juice. Turned at our Lincoln brewery, sugars chewed up with a yeast strain that rips hops forward, and finally dosed with cold pressed hop juice for extra pop. Passionfruit joose, pineapple joose, grapefruit joose. It’s all joose on a hazy pale ale frame. Set your stopwatch - it flows from glass to mouth in a snap.

Liquid Curious is available from the retail shop and taproom. Scoop these hazy droplets in 4 packs to go or in pints from the faucets.

A triangle of party brews 🇺🇸 Vans are stocked with Emits Showers Of Sparks and a brand new hazy beer chock full of American, New Zealand & Australian hops. Last week, we replenished Chicagoland with a second turn of Alemerica The Beautiful. Last batch before the Fourth of July.

Quarter Stick - 8.25% Double India Pale Ale hopped with Citra, Motueka, Sabro, Vic Secret & NZ Cascade. Notes of lime slushy, candied orange, and tropical resin 🍋‍🟩🍊🌴

Emits Showers Of Sparks - 7.25% Double India Pale Ale hopped with Mosaic, Sabro, and Galaxy. Notes of freshly ripened mango, bursting blueberry, and quick hits of dank.

We’re traversing the streets and boulevards and highways and avenues. Beer is three days fresh.

You’ve had yourself a week. Treat yourself to something tasty.

Today at 4pm, is visiting the taproom. Sunday we got rolling in.

A wave of West Coast Wednesday arrives tomorrow. Nestle your backside into a seat at the bar for 20oz pours of a hoppy and refreshing west coaster for only $5. The tunes will be groovy. Throw em back and whisk away.

Friday rolling 💨💨💨 Stacked drop this week. Hoppy and Hazy Ales, American IPA and American Pales. June is off to a good start.

The Day We Floated - 8% Double India Pale Ale hopped with Malson Sauvin, fresh Citra, Citra Cryo, Riwaka, & Riwaka SubZero HopKief. Inspired by the Balloon Fiesta in Albuquerque, NM. White grape gummies, lemon candy & pineapple juice.

Alemerica The Beautiful - 6% American Pale Ale hopped with hand selected Mosaix. Batch two of twenty twenty six and our 13th overall. Bigger feels of original strawberry gushers.

Greener Moss - 10.5% Triple India Pale Ale hopped with hand selected Citra & Simcoe. A bigger version of the 🐐Green Moss with a heavier hand of hops and more sweetness and decandence to balance it all out.

Mend The Past - 8% Double India Pale Ale hopped with Simcoe, Nectaron & Dank Dive Columbus Cryo. West Coast IPA or American IPA territory with big dank and citrus. Malt character and color courtesy of English Golden Promise.

All four available around Chicagoland very fresh. You can swing into the brewery and grab cans in the shop as well@or on draft in the taproom.

West Coast Wednesday in EFFECT. $5 of a gnarly west coaster in our 20oz orange willis. Goes all night. Might we suggest CCCCCLEAR IPA hopped with fresh Citra, Oregon Cascade, dank and fruity El Dorado, that KIND Centennial, and sticky Dank Dive Columbus Cryo.

Mend The Past is a hoppy brew with deep flavor of citrus and dank. First layered with malt sweetness from Golden Promise. Dry hopped with Simcoe, Nectaron & bold “Dank Dive” Columbus Cryo. Purple, orange and fuscia aromas bounce from glass.

Mend The Past is available from the brewery. At 8% it hits you good. The psychedelic melding of Simcoe, Nectaron & the Dank Dive is one to behold.

PS: Pints in the taproom are $5 just like they are every Sunday.
