Go to Lake Geneva Country Meats and get some of these!

Something you can look forward to this summer: Soaked USDA Prime Dry Aged Top Butt Steaks.

Let's break this down:

1. Soaked - we are soaking these meats in a beverage (these are being soaked in Wollersheim Winery & Distillery Brandy) to add a rich flavor. We'll use bourbon, red wine, and more for this series.
2. USDA Prime - these steaks are full of rich marbling which equals more marbling. That means more flavor and more tenderness!
3. Dry Aged - we're letting these steaks dry age to concentrate the soaked flavor and increase tenderness.
4. Top Butt Steaks - these sirloin steaks aren't the most popular, so they're less expensive than something like a ribeye. They are also perfect to slice and share, so multiple people can try these steaks.

This is a sneak peak of our first batch of these limited steaks. They'll be available for purchase in a few weeks. Stay tuned all summer long to see what we do in this series!

This month, we celebrate St. Patrick’s Day! To add a little Irish flavor to your menu on March 17th, we have a tasty, authentic, Irish stew recipe that is guaranteed to WOW your guests. With tender beef, fresh veg, plenty of potatoes, and a rich broth, you can be sure that everyone will have a shamrockin’ good time with this delicious dish.

1. In a large pan add 1.25lbs of our delicious beef and cook until brown.
2. Add 6 minced cloves of garlic, 2 cups of water, 1 cup of full-bodied red wine, 2tbps of tomato paste, 1 tbsp of sugar, 1 tbsp of dried thyme, 1 tbsp of Worcestershire sauce, 2 bay leaves, and, of course, 1 cup of Guinness extra stout to the pan, bring to a simmer, cover and let it cook for about 1 hour.
3. In another pan saute 1 large chopped onion and 4 carrots chopped into bite-sized pieces in 2 tbsp of butter. Set aside.
4. Once the stew has been cooking for approximately 1 hour, add the sautéed vegetables, along with 3lbs of peeled russet potatoes cut into half-inch pieces. Cook for a further 40 minutes on gentle heat.
5. Season with salt and pepper, sprinkle with parsley, and enjoy!
