Beyond Burger Bourguinon Style with Mushroom Duxelle, Herbed Goat Cheese, Tomato Confit, and Balsamic Onion

“Ground beef” Bourguinon Style:
Combine meat with 1/4 cup red wine with chopped garlic, fresh herbs (I used rosemary and thyme), salt and pepper. Proceed to divide and patty.

Herbed Goat Cheese:
Blend in a food processor: dill, chives, rosemary, thyme, lemon, salt and pepper with 8 oz of goat cheese.

Tomato Confeit:
Preheat oven to 260F. Slice 1 qt heirloom cherry tomatoes in half and place in roasting pan coated with oil (about halfway covering tomatoes). Add sprigs of rosemary and thyme. Crush three to four garlic cloves in half and add. Season with salt and pepper and roast for 2 hrs.

Mushroom Duxelle:
Use sauté pan and cook sliced shiitake and mini portobello mushrooms in oil (I used the tomato confeit oil). Add diced shallots and minced garlic. Deglaze with 4T red wine. Light chop in food processor. SET ASIDE

Balsamic Red Onion: slice 1/4” thick slices of red onion. Sautéed with oil (I used the tomato confeit oil). Let carmelize and deglaze with balsamic vinegar. Season to taste.

Grill patties and toast buns. Assemble bun, mushroom duxelle, patty, herbed goat cheese, tomato confit, balsamic onion, bun.

NOTE: I used a whole package (2 oz each) of herbs divided into this whole dish. Only dill and chives were completely used into the herb goat cheese
