🍷 I have been down a lot of cellars in Spain. This one still gets me.

Fifty-nine stone steps below El Lagar de Isilla in Aranda de Duero, and you are standing in the 15th century. The whole old town is undercut like this, more than 7 km of tunnels that families dug by hand beneath their own houses, because w**e was the economy and the w**e needed somewhere cool to sleep. Around 135 of these cellars are still here. Ten to thirteen degrees, every single day of the year, no matter what the sun is doing up on the street.

And here is the part I love telling people: in 1503, Aranda de Duero became the first town in Spain to have a map drawn of it. It was made to settle an argument between neighbours, and Castile later used it as a reference for laying out cities in the Americas.

This is the kind of place I take people on our Spain tours. Not a tasting room. A tunnel.

🍷 THE CATHEDRALS OF W**E

I'm standing in El Pinell de Brai, a village of about a thousand people in the Terra Alta, the southernmost w**e region in Catalonia.

The building behind me is a w**ery. It was finished in 1922, designed by Cèsar Martinell, who studied under Gaudí and went on to build dozens of these cooperative cellars across Catalonia. Àngel Guimerà called them catedrales del vino, and once you stand in front of one you understand why. The arches, the light, the ceramic frieze by Xavier Nogués across the front with its harvest scenes.

Here's the part I love. This was not built by a wealthy family or a famous château. It was built by a farmers' cooperative, right after the phylloxera years, by people who had every reason to build something cheap and practical. They chose this instead.

Terra Alta is still not on most American itineraries. It should be. Roughly a third of the world's Garnacha Blanca grows here, and the whites coming out of this region right now are some of the best value in Spain.

Lately at gatherings and dinners I keep noticing the same thing: people are asking for something with less alcohol. It's not just a trend, the numbers back it up. Global consumption of lower-alcohol w**e is growing 21% every year.

The problem has always been the same: take out the alcohol, and you usually take out the character of the w**e too. Traditional methods, using heat or aggressive filtration, sweep away the most delicate aromas along with it.

But science is tackling this from a different angle. At the University of Arkansas, a researcher named Zachary Bean is developing a method that doesn't remove alcohol at the end — it prevents it from forming in excess from the start of fermentation, using yeast strains selected for their aromatic intensity. The goal: go from 11-12% down to 9-10% without losing the w**e's sensory profile. And it's a low-cost technique, perfect for small vineyards that can't afford expensive industrial equipment.

CASTILLO DE IZAN 🍷🏰

[ES] Amigos, tengo que enseñaros este sitio. En el pequeño pueblo de Gumiel de Izán, en plena Ribera del Duero, hay un restaurante construido como un auténtico castillo — torres de piedra, techos de madera pintados a mano, e incluso su propia bodega-bar en el sótano.

Traje mi cámara para enseñaros el lugar, y la verdad es que el edificio roba el protagonismo tanto como el vino. Es exactamente el tipo de sitio que me encanta añadir a nuestros tours de vino por España — lleno de historia, carácter, y por supuesto, un gran Ribera del Duero en la copa.

🍷 WHAT DOES YOUR ZODIAC SIGN DRINK?

I had some fun matching all 12 zodiac signs to Spanish w**es that match their personality. Fiery Aries gets a bold Mencía. Grounded Ta**us gets a rich Ribera del Duero. Dreamy Pisces gets something floral and ethereal.
