Once under-appreciated, the hanger and skirt were used for ground beef or kept aside by the butcher. Today, both hanger and skirt steaks are prized by home chefs and restaurants alike. These two cuts come from the same part of the cow called the plate, but you may prefer one to the other.

Hanger Steak: this muscle does very little work and so it is extremely tender and packed with beef flavor. I have been trying to get someone from Allen Brothers to reply to my question on how this happened to one of their Beef Wellingtons. The directions were followed to the letter and the roast when sliced was cooked a perfect medium-rare. I have sent Allen Brothers and email and used the website support link with no reply. Would someone please tell me how this happened to a very expensive centerpiece to our Holliday meal. It looked like a train wreck. If I did anything wrong, I need to make sure I learn something. If this is a product issue....

Last week we had some delivery problems with a meat order...for Friday, of course. So when I got ahold of someone on Monday, they were very helpful in sorting through the problems - and I now have my meat. Good thing the weather here is warm the next few days - gonna do some grilling!
