Oven Grilled Whole Branzino Fish I Roasted Whole Greek Branzino Recipe I Gastro Guru
You will fall in love with this delicious Oven Grilled Whole Branzino!

Ingredients
Main Ingredients:
1 Whole Greek Branzino Fish - Scaled, Gutted & Cleaned & Scored
1 red onion - roughly chopped
1 red bell pepper/capsicum - seeds removed, diced
2 Roma tomatoes - diced

Ingredients for glazing/seasoning Branzino fish:
3 tbsp good quality extra virgin olive oil
Juice of 1 large lemon
2 large cloves of minced garlic
1 tbsp dry oregano
salt, crushed black pepper and red chili or paprika powder to taste

Cooking Instructions:
Preheat oven to 400* F
In a bowl prepare glaze/seasoning mix by adding ingredients listed above Mix well then apply glaze generously to both sides of fish, and on the inside of the fish as well. Set aside
Layer roasting pan with veggies listed above
Drizzle glaze/marinade over veggies, leaving some for later use. Mix well
Place grilling rack over veggies then place Branzino fish on it
Oven Grill/Roast by placing roasting pan with fish & veggies for 20 minutes
Brush fish with remaining glaze and broil for about 4 minutes
By now your Branzino should be ready!
Transfer roasted veggies to serving platter. Place fish over it

Amazing Chorizo & Potato Taquitos
Step By Step Recipe for Chorizo & Potato Flauta flour tortillas. Served with Salsa Verde & Crema! See recipe below.
Chorizo & Potato Flour Flautas & Corn Taquitos Recipe:
12 Corn Tortillas
6 Flour Tortillas
1 LBS Chorizo - seasoned & smoked ground pork or
(5 Chorizo sausage removed from casing)
1 LG potato, peeled & diced into small pieces
2 TBSP Cooking/Veg. oil to cook potato
Salt to taste
3 cups Cooking oil to deep fry flautas/taquitos
8 OZ. Shredded Chihuahua - Mexican cheese
1 Cup Crema
1/2 cup Salsa Verde - tomatillo salsa
3 TBSP Corn Starch mixed with 3 TBSP water to make paste
Method:
Heat 3 TBSP cooking oil in a hot nonstick pan. Reduce heat to medium
Add diced potato & salt to taste. Cook for 5 mins or until done
While potato is cooking, brush corn & flour tortillas with oil, set aside
Once diced potato is cooked , remove from pan & let it cool down
In a bowl mix chorizo, cooked potato & half the shredded cheese
Next place tortillas in a blow and microwave for 1 minute, set aside
To Make Flautas/Taquitos:
Add 2 to 3 TBSP of chorizo/potato/cheese mixture to each tortilla
Roll one tortilla at a time, pulling back to keep it tight
Before the final roll, brush tortilla with corn starch paste & seal it tightly

Heat 3 cups of oil in a large frying/saucepan
Once oil is hot reduce to medium and start frying tortilla rolls in batches
Start with Corn tortillas then with Flour tortilla
Fry until golden brown, set aside until all are done
To serve place 6 to 8 flour flautas and/or corn taquitos on a platter
Garnish by drizzling Crema & Salsa Verde on top or serve on the side
Walla! Your Chorizo & Potato Flautas/Taquitos are ready!

Salmon with Mushrooms in Creamy Sauce

Ingredients:
2 Salmon Fillets
Salt & crushed black pepper to season Salmon

2 tbsp olive oil
1 onion - chopped
2 cloves of garlic - minced
1 tsp tomato paste
2 tbsp butter
1 tsp dry basil-oregano mix
1.5 cups of sliced cremini mushrooms
1/4 cup heavy cream

Lamb Nihari
You will love my delicious, step by step, Nihari recipe!
Nihari is a meat based dish that originated in Old Delhi, India during the 18th century under the Moghul Empire. It was meant to be a high energy breakfast dish. It is also a very popular dish in Pakistan.
Ingredients & Recipe below:

Mutton Nihari Ingredients:
3 LBS mutton/lamb pcs
1/4 cup cooking/veg. oil, plus 2 more TBS
2 TBSP Nihari Masala - See recipe for this at the bottom
You can use store bought Nihari Masala instead
1 Large red onion - finely chopped
6 cups water to cook Nihari
1 Large green chili - minced
2.5 TBSP All purpose flour
1.5 cups water to make flour slurry
1 TBSP ginger - sliced thin into matchsticks/slivers
Salt to taste
1 TBSP lemon juice
2 TBSP chopped cilantro/coriander leaves

Cooking Instructions/Method:
Heat 1/4 cup cooking/veg. oil in a large nonstick pan
Fry chopped onion until brown, remove from pan, set aside
Now add mutton/lamb pcs to the same pan and fry until it changes color
Reduce flame from high to medium then add Nihari Masala & salt to taste
Mix well then add water, add fried onions
Cover pan with lid & cook for 1 hour first
While Nihari is being cooked prepare flour slurry by adding 2.5 TBSP all purpose flour to 1.5 cup water. Mix well set aside
After an hour check to see if meat is tender, if not cook for another 30 mins. The time it takes to cook meat well depends on its quality
Next open open lid and add flour slurry to Nihari in the saucepan
Mix well then add lemon juice and chopped cilantro/coriander leaves
Wala! Your delicious Mutton Nihari is ready! Transfer to serving bowl and garnish with ginger slices. Enjoy with Naan or Basmati rice.

Nihari Masala Recipe:
Toast all the spices mentioned below in a frying pan for 1 minute
Transfer to a blender/grinder and grind to make Nihari Masala
8 Bay leaves
3 Cinnamon Sticks
1 Star Anise
10 Green Cardamom
20 Black Peppercorn
10 cloves
1 TBSP Dry Ginger powder (Saunth)
2 TBSP Coriander Seeds
2 TBSP Cumin Seeds
1 TBSP Black Cumin Seeds
1.5 TBSP Fennel Seeds
Use as needed, store remaining for future use.
