Sweet potato glass noodles with sautéed vegetables in a savory-sweet soy, garlic sauce.

Serves 1-2

Ingredients:
3.5 oz pack of noodles (sweet potato glass noodles)
Sautéed veggies of choice

2 tbsp soy sauce or Braggs liquid amino
1 tbsp brown sugar or maple syrup
1 garlic clove, minced
1 tbsp rice wine vinegar
1 tbsp toasted sesame oil
2 tsp oyster sauce

Mix the sauce together and pour on the noodles and vegetables

Top with Siracha and a protein of choice

Chia pudding is a great way to get your fiber, omega 3’s, protein, antioxidants, and minerals. Soaking them softens the seeds are starts breaking down some of the fiber, so they are easier to digest.

Ingredients:

5 tbsp chia seeds
1 can of coconut milk

-Whisk together and refrigerate for a couple of hours or overnight.

-Mix with some Greek yogurt and maple syrup and top with fruit.

This smoked salmon dip is smoky, creamy, and absolutely fabulous!! It’s perfect for entertaining or just snacking on straight from the fridge.

Ingredients:
4 oz cream cheese, softened
1/2 c crème fraiche
The zest of one whole lemon
The juice of half of a lemon
1-2 tbsp fresh dill
Black pepper
4 oz hot smoked salmon fillet (remove the skin and any brown stuff)

Mix it all together and refrigerate for a bit before serving. Serve with crackers, cucumbers, baguette, crostini…and enjoy!

This corn salad is a total game-changer; endlessly versatile and packed with flavor! Pile it on top of just about anything, or toss it with grilled chicken and feta for the perfect light meal

Ingredients:

2 cups of corn
2 cups of cucumbers, diced
1/3 c red onion, diced
3/4 c tomatoes, chopped
1/4 c cilantro, chopped
1 jalapeño, chopped and discard the seeds if you want it less spicy
1 bell pepper, chopped
The juice from one whole lemon
The juice from one whole lime
1/2 tsp garlic powder
1/2 tsp cumin
1/2 tsp chipotle powder
1 1/2 tsp salt
1/4 c avocado oil

Boil the corn for 4-5 minutes and let cool! Cut it off the cob. (If you don’t have fresh corn, you can use frozen.)

Mix it all together and enjoy!

This cous cous bowl is one of my all time favorites! The flavors just pop and everything works so well together. This side dish is great for
get togethers, parties, school lunches, almost everything!

Ingredients:
2 smaller or one bigger sweet potato
1 can of garbanzo beans
1/2 tsp curry powder
1/2 tsp garlic powder
1/2 tsp salt 1/4 tsp pepper
Avocado oil (to coat the sweet potatoes and garbanzo beans)
3/4 c dried cranberries
3/4 c feta crumbles
1/3 c parsley
10 oz package of cous cous
1/2 c pumpkin seeds (optional)

Dressing:
Juice from 1/2 lemon
2 tbsp orange juice
1 tbsp maple syrup
1/4 c olive oil
1/2 tsp salt
1/4 tsp pepper Avocado
~Mix together~

Directions:
-Dice up the sweet potatoes and coat with olive oil, salt, and pepper
-Mix curry, garlic powder, salt, and pepper together and add to the garbanzo beans with some avocado oil.
-Roast the sweet potatoes at 350 degrees for 20-25 minutes or until soft on the inside
-Roast the garbanzo beans at 350 degrees for 15 minutes
-Cook the cous cous; follow the directions on the cous cous package
-Assemble-
-Put cooked cous cous in a medium size to larger bowl.
-Add the cooked sweet potatoes and garbanzo beans
-Then add the feta, dried cranberries, and parsley
-Pour on the dressing and mix together
-Add in the pumpkin seeds

Greg’s Greek chicken

Makes about 6-8 servings

Ingredients:
3 lbs chicken (breasts and/or thighs)
The juice from 6-7 lemons
The zest from 1 lemon
8 garlic cloves, minced
2-3 tbsp honey
1/3 c fresh dill, chopped
2 tbsp dried oregano
2 tbsp smoked paprika
3 tsp salt
1 tsp pepper
3/4 c olive oil

Mix the marinade together and add it to your chicken. Let the chicken marinate for 3-5 hours.
Grill up and enjoy!

Lemon basil pesto is a great twist on regular pesto. The lemon is really nice in it and goes great on fish, chicken, and pasta.

Ingredients:

-About 2 cups of basil
-1/2 lemon (skin and all, no seeds)
-the juice from the other half of the lemon
-2 garlic cloves
-1/4 c walnuts
-1/4 c Parmesan, grated
-1/3 c olive oil
-1 tsp salt
1/2 tsp pepper

Blend together and voila! Enjoy!
