Happy ! Our nutrition lead, , is totally FALLing for this season’s produce, especially all of the squash! 🍠
We love all of the squash this season has to offer, but we thought we would focus on one of the standout fall stars, Butternut squash.
Butternut Squash is loaded with micronutrients and is a wonderful way to get your vitamins in. We’ve integrated butternut squash into a handful of our fall dishes to promote seasonal eating, and the benefits that squash has on your health:
🦴 Promote Bone Health
Butternut Squash has lots of naturally occurring manganese which helps the body maintain healthy bone structure, calcium absorption, and improves the mineral density of the spinal column. Additionally, vitamin C takes part in the production of collagen, which is important for building bone mass.
👁 Linked to Improved Eyesight
Squash is loaded with vitamin A, zeaxanthin, and lutein, which are all incredibly important for protecting and improving eyesight.
💪 Skin Protection
A study published in the American Journal of Clinical Nutrition found links between Vitamin C and skin aging. Squash contains high levels of Vitamin C and this study examines higher intakes of the vitamin and the correlation with a lower likelihood of wrinkles and dryness.
