The old smoker’s burner finally kicked the bucket. Broke in the replacement tonight. I think she did just fine… pulled a little piggy shoulder. Side note: I love how soft your hands get when you pull pork by hand.

Stupid Crispy Chicken Parm. Tried a new breading technique. I took the egg wash and added the seasoning(pepper, basil, oregano, garlic) then a couple tbs of flour to make a light batter. The batter really grabbed onto the chicken and the panko incredibly well. I’ll be using this again. Topped with provolone, mozz, parm and Romano. Pizza by Biggzee red sauce and some fresh basil on angel hair.

Homemade jerk marinated grilled chicken breast sliders tonight. Topped with a crunchy Pineapple, red onion slaw with a touch of soy sauce and sesame oil. On a toasted martins potato bread slider roll.

Compensation is dependent on your experience, work ethic and availability, $16 - $19/hr

We are currently seeking LINE COOKS who are highly energetic, self-motivated and have a keen attention to detail. An ideal candidate will be someone who knows how to work independently as well as part of a team.

Kitchen Team Member Responsibilities include and are not limited to:

• Ensure all food meets food safety and quality standards to eliminate cross-contamination
• Prep all cold and hot food items using prep worksheets
• Follow proper knife safety procedures
• Operate oven and hot prep equipment, ensure proper time/temp of all hot and cooked foods
• Operate slicer, robot coupe and all other cold prep equipment
• Set up and break down stations
• Maintain clean and organized prep area and equipment throughout shift
• Communicate between and with FOH and BOH professioanlly
• Inventory line, prep areas and walk-in to determine needs
• Willingness to work all areas of the kitchen as needed including; dish, expo, prep
• Learn and maintain knowledge of our menu + ingredients
• Put received orders away
• Ability to lift 30-50 lbs regularly, to stand, bend, reach for long periods of time

Requirements/Desired traits
• 1 year kitchen experience
• Knowledge of proper food safety handling
• Comfortable working in a fast-paced environment with kitchen and food prep equipment
• A team player with a positive can-do attitude
• Quick and adaptable learner
• Collaborative communication skills
• Accountable in upholding high standards
