Paradigm is currently roasting coffee in small batches - using Fair Trade and/or Direct Trade coffees. The coffees have been purchased by green coffee importers paying premiums (above market value) for these high quality coffees, in an effort to provide better living wages for the coffee producers. We will also be donating a portion of our proceeds towards programs whose mission it is to improve t

he living and working conditions of coffee farmers, their families and their communities. We choose to do this because all of this specialty coffee is nothing without those who meticulously produce it.

If you're in the North part of Chico and smell something pleasant in the air, that is the smell of the Kent and Bourbon varietals that compose the Tanzania Mbeya Isende.
The last batch of it just got roasted. Gone forever.
But if you're wanting some of this sweet coffee with hints of toasted nut and caramel (with some black tea w/ lemon as it cools) you'll just need to go to Portland or Montana to get it, this is for some good buds out there.
Next up, a fresh peaberry from Tanzania and a Guatemala flat bean!

NOPE! Never.

Coffee arrival alert: Guatemala and Tanzania.

Guatemala Patzun Chimaltenango, is a wet processed offering that consists of Typica and Bourbon varietals, offering up a fruit-forward and very sweet coffee.

Tanzania Tarime, is a wet processed peaberry out-turn of the Bourbon varietal. Akin to its Kenyan cousins, this peaberry should prove to be impressive and is sure to turn heads!

This one is for all you coffee freaks who are into coffee varieties and things such as 'quality potential at high altitude, yield potential, plant stature, optimal altitude, leaf rust susceptibility, CBD (coffee berry disease) susceptibility, nematode susceptibility, bean size, leaf tip color, and much more.

This is a great resource - that World Coffee Research has compiled - for coffee farmers to utilize when making decisions on what variety to plant, as this is their livelihoods this is crucial information.

Take a peek into the world of varietals, farming and the factors involved in a large (and crucial) part of the coffee chain!

Cold brewed coffee weather, yes?
Need a simple recipe?
Equal parts ground Paradigm coffee and cold, filtered water in a large (glass) container.
Steep for about 16 hours in refrigerator and drain through a clean cloth (holding back grounds) or utilize a French press.
Dilute your now freshly brewed concentrate to your liking.
Keep refrigerated for up to 2 weeks!
Smooth, sweet, shelf stable cold brewed coffee; BAMMMMM!

Straight Outta The Roaster.

Tanzania - Mbeya Isende, single origin bean.
This washed coffee gives off a sweet, toasted nut and caramel brew, along with slight notes of black tea and lemon citrus.

Comprised of Kent and Bourbon varietals, it is a clear winner in the drinkability category!
