Hi, we are Pam and Dave and we own Windswept Acres, a small family farm and pickling business in Chino Valley. Our products have been sold in stores and farmers markets all around Arizona including Jerome, Sedona, Flagstaff and Scottsdale. Our start to pickling mostly started because of Dave’s grandmother. Due to living through the great depression, she was raised to live sustainably. If it could
be preserved, re-used or composted, she did it. We took her hard working, thrifty ways to heart when we started pickling, and have turned it into a passion for nostalgic pickles, amazing flavors, and unique products. Every year, for many different reasons, millions of pounds of edible produce becomes unsellable. Buyers may not think it is "pretty" enough for store shelves, or it sat too long and the next batch of produce is ready for the shelves, or any other reasons... This produce ends up in the local landfills, which ends up causing more methane gases than carbon dioxide!! While this IS a huge problem, this excess produce is also an opportunity. Our solution to this problem is food recovery through preservation. If we can get to this produce while it is still good we can get it directly into jars and keep thousands of pounds from becoming inedible. Our plan to tackle this problem is to turn our existing trailer into a mobile processing unit that we can take right to the problem, get that produce before it is dumped in the landfill and preserve it right then and there.
