This is my go to comfort meal. It’s comforting not only because it’s warming and tasty, but also because it always reminds me of my mother and grandmother. That reminder to the women in my family is just as fulfilling as eating the meal itself. Good old potato soup! I do vary my version by adding bacon (regenerative-pasture raised) and raw cream. Adding a salad of microgreens and hearty sourdough bread makes for a completely satisfying meal.
