Wiggins Family Foods LLC is a food brand focused on perfecting the art (and science) of salsa. William Wiggins is nothing if not analytical. He has a degree in chemistry and has worked in the food science industry for years, testing and tweaking packaged foods until they’re perfect and navigating a tangled web of red tape to get those products on the shelves. With his background, William is perfectly positioned to be successful running his own food business.

Processing and selling canned goods can be an uphill battle. There’s a lot of paperwork involved in getting products approved for retail sale. To William, this web of red tape was eye-catching. “From a business standpoint, doing something that uses my skills but naturally cuts off competition will hopefully make me more likely to be successful,” he says.

He’s gone through these processes of approval multiple times through his full-time job. “It’s nothing over my head,” he says. “It’s just a matter of sitting back, reading, plugging things into a spreadsheet, and checking off boxes.”

William started developing his recipes by researching popular flavor combinations in salsas before folding his own preferences into the mix. Then, he relied heavily on his chemistry skills to guide him to the ideal flavor profiles. He offered up samples of his salsas to his coworkers and logged their feedback.

“I made the product over and over again, I think 20 or 30 times,” William says. “At some point, I landed on recipes that everybody liked no matter what flavor it was.”
