For those who requested the recipe for the pasta we had at our last meeting, here it is! If you try it, let us know how it turns out. Thank you, Joe Mastruserio!! Mangia!
PASTA ALLA ZOZZONA
Makes 6-8 servings
Ingredients
1 lb Rigatoni
8 Oz Guanciale (cured pork cheek)*
2 Mild Italian Sausage links, casings removed (approx.. 8 ounces)
4 Egg Yolks
1 cup finely grated Pecorino Romano cheese (more for serving)
1 - 24 ounce jar of ‘Passata’ (tomato puree). Crushed tomatoes are fine also.
Fresh ground black pepper (to taste)
Italian Parsley
*Guanciale is cured, unsmoked pork cheek. It is expensive and can be difficult to find. Jowl Bacon is
cheaper and available at most butcher shops, but it is smoked. If using jowl bacon, a er dicing, rinse
in cold water to remove some of the smoke flavor before cooking.
Instruc ons
1. Start a pot of water for the pasta.
2. Combine the egg yolks and the cheese into a thick paste and set aside.
3. Dice the guanciale into ¼” x ½” strips and cook in a large skillet over medium heat to render the
fat and slightly crisp the meat.
4. 5. Remove the cooked guanciale and set aside, leaving the fat in the pan.
Add the Italian sausage to the pan and cook, breaking it into crumbles about the same size as
the guanciale.
6. While the sausage is browning, salt the boiling pasta water and add the rigatoni. S r for one
minute to keep the pasta from s cking. Cook for 9 more minutes (10 minutes total).
7. Add the reserved guanciale to the sausage and add the passata. Scrape the bo om of the pan
to get all the cooked bits (fond) loosened from the pan.
8. 9. Season with fresh ground black pepper and lower the heat to a simmer.
When the pasta is al dente (10 minutes) use a spider (strainer) to remove the pasta from the
water and add it to the sauce.
10. Add pasta water to the egg/cheese mixture to make a thick, smooth sauce.
11. S r in a half cup of the pasta water to the sauce and turn off the heat.
12. Slowly add the egg/cheese sauce to the pasta s rring constantly for one minute to cook the egg
mixture.
13. Serve immediately with chopped fresh parsley and addi onal Pecorino Romano cheese.
Varia ons:
Add red pepper flakes to the meat or use Hot Italian Sausage.
