Another amazing (and super easy) recipe from Debbie the Dietitian 🍌

Five‑Ingredient Freeze‑Dried Banana Chocolate Bark
Ingredients (5):
Freeze‑dried banana slices
Dark chocolate chips
Natural peanut butter
Coconut oil
Flaky sea salt

Instructions:
Line a small baking sheet or plate with parchment paper.
Melt the chocolate chips and coconut oil together (microwave in 20‑second intervals or use a double boiler), stirring until smooth.
Stir the peanut butter into the melted chocolate until fully combined.
Pour and spread the mixture into a thin layer on the parchment.
Press freeze‑dried banana slices evenly over the top and sprinkle lightly with flaky salt.
Refrigerate for 15–20 minutes, or until firm. Break into pieces and enjoy!

A lighter version of strawberry shortcake using freeze-dried strawberries for extra flavor 🍓

This version is:
✔️ Lower sugar
✔️ Lower fat
✔️ Packed with real fruit flavor

I love using Nature’s Turn freeze-dried strawberries in both the biscuits and topping.

It adds a natural strawberry boost without needing extra sugar.

Makes: 8 servings
What makes it “lighter”: minimal added sugar, no heavy cream or butter heavy
biscuits, and a yogurt based topping with a small amount of light whipped topping for a
classic “shortcake” feel.

Ingredients
1) Strawberry Filling (low sugar)
 4 cups (about 600 g) fresh strawberries, sliced
 1 Tbsp lemon juice
 1–2 tsp monk fruit/stevia blend/sucralose (or other zero cal sweetener), to
taste
 2 Tbsp (about 10 g) freeze dried strawberries, lightly crushed (optional, extra
flavor)
2) Light Strawberry Shortcakes (low fat)
 2 cups (240 g) all purpose flour
 ⅓ cup (about 30 g) freeze dried strawberries, crushed into a fine powder
 1 Tbsp baking powder
 ¼ tsp salt
 1 Tbsp granulated sugar (optional but helps browning; still low)
 ¾ cup (170 g) nonfat plain Greek yogurt
 ½ cup (120 ml) skim milk
 ¼ cup (60 g) unsweetened applesauce
 1 egg white
 1 tsp vanilla extract
3) Strawberry “Cream” Topping (low fat)
 1 cup (about 225–230 g) nonfat plain Greek yogurt
 1 cup light whipped topping (or use all yogurt for even lower fat)
 1–2 Tbsp freeze dried strawberry powder (to taste)

 Optional: 1–2 tsp non-nutritive sweetener blend if you want it sweeter

Instructions
A) Make the strawberries
1. In a bowl, combine fresh strawberries + lemon juice + sweetener.
2. Let sit 15–20 minutes until juicy.
3. Stir in the crushed freeze dried strawberries (optional) for extra strawberry
punch.
B) Bake the shortcakes
1. Preheat oven to 425°F (218°C). Line a baking sheet with parchment.
2. In a large bowl whisk: flour + freeze dried strawberry powder + baking powder
+ salt (+ 1 Tbsp sugar, optional).
3. In another bowl whisk: Greek yogurt + skim milk + applesauce + egg white +
vanilla.
4. Pour wet into dry; stir just until combined (don’t overmix).
5. Scoop into 8 mounds (or shape into 8 biscuits) on the sheet.
6. Bake 12–14 minutes, until tops look set and lightly golden.
7. Cool 10 minutes.
C) Make the topping
1. Stir together Greek yogurt + freeze dried strawberry powder.
2. Fold in light whipped topping (or skip it for an all yogurt topping).
D) Assemble
1. Split a shortcake.
2. Spoon on strawberries + juices.
3. Add a generous dollop of strawberry topping.
4. Top with the other half and add more berries if desired.

 Carbohydrates: ~40.3 g
 Protein: ~10.3 g

 Total Sugars: ~12.7 g (mostly from fruit + dairy; only ~1 Tbsp added sugar in the
whole recipe)
 Fiber: ~3.3 g
 Sodium: ~168 mg
If you want, even lower sugar
 Use no granulated sugar in the biscuits (skip the 1 Tbsp).
 Use all Greek yogurt (skip the light whipped topping) and sweeten lightly with
monk fruit/stevia.

As a dietitian and figure skater, nutrition and fitness have always been a huge part of my life.

But after a tough stretch of illness — including flu, norovirus, COVID, and Lyme disease — my health took a hit. Fatigue and brain fog made it hard to stay consistent with the habits I once relied on.

By 2024, I knew it was time to reset. I focused on an anti-inflammatory diet, increasing protein and produce and cutting refined sugars and starches.

The hardest part? Finding healthy snacks that were actually convenient.
