一福堂 IFT Bakery

源溯到日治昭和三年，一福堂創辦人陳端忠老師傅，選
定緊臨人潮聚集的大墩梅枝町（今竹廣市場中正路
上），開創以糕餅專賣的「一福堂菓子舖」，小小店面
內不時飄散著四溢的作餅香味，特別是「手工鳳梨酥」
的出爐，總是吸引無數過路的生意客與日本大人上門捧
場。一福堂「手工鳳梨酥」，乃日據時期最出名的中部
糕點，創辦人陳老師傅採用了當時台灣霧峰盛產「旺
來」為材料，經反覆的摸索改良，才將土產水果“甘甜
呀甘甜”的滋味，巧妙融入其內，橙黃色澤與質樸的在
地口味，深深打動眾人的心，很快即成為日據時期一福
堂的知名代表作。

　　靠著相傳的好手藝和不偷工減料的古早味作餅原
則，一福堂代代秉持著專職製作道地的「老台中風味名
產」為旨。像是民國四十、五十年代，藉由火車兜售傳
開的名產「太陽餅」，一福堂即以細緻口感令饕客難
忘，更扮演起月台零售攤與飛快火車小姐們的大宗供貨
商；民國五十三年，結合日本引進之新技術，首創研製
出的「檸檬餅」，創造出一股追求異國風味的銷售高
潮，更是引發中部糕餅市場一陣仿效的經典之作，在在
顯示出老店結合傳統、創出新意的堅持與熱情。
