🐖 Mayo Eats Heritage Pork – Red Wattle Reservation 🐖

At Mayo Eats, we believe great food starts long before it reaches the table. It begins with how it’s raised. This year we are offering a limited opportunity for friends and family to reserve homestead-raised Red Wattle pork — one of the most sought-after heritage pork breeds in the country.

For the last several years we raised Red Wattle hogs, and the results were incredible. The meat was some of the deepest dark red pork we’ve ever seen, packed with flavor and perfect marbling. Even the butcher at Walke Meats called it the wagyu of pork, the best marbling he has ever seen. Our freezer was filled with everything from fresh ground pork to thick pork chops… and of course some of the best bacon we’ve ever tasted.

Red Wattle hogs are known for producing premium-quality pork, rich flavor, and exceptional texture. These pigs will be raised right here on the Mayo property, living a low-stress life with plenty of space, sunshine, and care.

How It Works
We will raise the pigs from April until November, then take them to the butcher. Each family will receive their own hog and will complete their own cut sheet with the butcher so you can choose exactly how you want your pork processed.

Pricing
• $450 deposit to reserve your Red Wattle
• $450 due at delivery to butcher
• Total pig cost: $900

Processing will be paid directly to the butcher.
Last year's processing averaged about $450 (This is based upon who much curing, smoking, and sausage you select).

Estimated Total Cost
• Hog: $900
• Processing: ~$450
• Total: about $1,350

Last year our hogs averaged around 300 pounds, which works out to roughly $4.50 per pound for premium homestead-raised pork.

For comparison, the USDA Pasture-Raised Pork report shows whole carcass prices ranging from $3.10 to $9.50 per pound. Our goal isn't to make money — it's to share incredible, responsibly raised pork and help families fill their freezers with high-quality meat they can trust.

Last night I stayed up late because Iran my smoker for 12 hours…

This morning I checked the brisket and Isreal good. 😎🔥

Neighbors woke up wondering what that amazing smell was drifting through Verdigris.

That wasn’t diplomacy in the Middle East…

That was low-and-slow negotiations happening in the backyard.

Brisket finally surrendered around 203° internal.
The pork shoulder followed shortly after.

Peace treaties were signed with BBQ sauce and white bread.

We are incredibly thankful for the love, prayers, and support so many of you have poured into Graceanne over the years. Your encouragement and generosity have been such a blessing, and the mission trips she has been able to be part of have truly been life-changing for her.

This year, Graceanne has the opportunity to serve on a 10-week mission trip to Bulgaria. She will be working alongside a team to share God’s love and testimony with those she meets, and we are so excited to see how God will use her during this time.
