Meet Dragon’s Reckoning, the newest fire-breathing creation from Mayo Eats.
This one didn’t happen overnight.
For nearly 10 months, shredded ginger has been quietly fermenting in its own natural juices, developing a deep, bright ginger flavor you simply can’t get from fresh ginger alone.
Right beside it, another ferment has been aging for nearly 10 months. A wicked blend of superhot peppers packed with garlic and carrots, slowly building heat, depth and character.
And when I say superhot, I mean it.

Now those two long ferments have finally met.
The fermented ginger and superhot peppers are blended with rice vinegar, lime, fresh garlic, shallots and lemongrass, then layered with tamari, shiitake mushroom, soy sauce powder, toasted sesame, coriander, white pepper and just enough brown sugar to round everything out.
The result is an Asian-inspired fermented hot sauce with serious heat and even more flavor.
You’ll get that deep fermented ginger, bright citrus and lemongrass, followed by layers of soy, shiitake mushroom and toasted sesame umami.
And then...
the dragon wakes up.
