No matter which cut of beef you selected to serve, here are some tried-and-true tricks chefs use to get the juiciest, most delicious results.

1. Use Tools of the Trade
We recommend using an ovenproof meat thermometer--placed in the thickest part of the roast, avoiding the bone. Unlike an instant-read thermometer, this can stay in the roast while cooking and helps eliminate the unnecessary opening of the oven. It also prevents poking multiple holes in the roast, causing you to lose some of the juices.

2. Go Low and Slow
When placing the roast in your roasting pan, preferably on a roasting rack, place the beef on the rack fat-side-up. Using a rack improves air circulation and promotes even cooking. Cook as recommended, being sure not to overshoot your target temperature, as it will continue to rise after pulling the roast from the oven. 3. Let it Rest
Once you pull the roast from the oven, transfer it to a carving board and cover it loosely with aluminum foil. It is important to let your roast rest so the juices have time to re-absorb into the meat ensuring a tender, juicy roast. This is called "tenting", and can take as long as 15-20 minutes.

4. Carve and Serve
The most important tool for properly carving your roast is a sharp knife. If you're using a meat fork to carve, try not to pierce the roast to hold it in place. Always remember to cut across the grain for maximum tenderness.

The Clarion Locker offers professional butchering of beef, hogs, lamb, goat, and venison for all North Iowa Producers. They work hard to create quality packaged meat products! We are also featuring the Ventura Locker, another one of our local meat processors!

The Ventura Locker was established in 1938, that currently processes beef and hogs. They also carry a full line of retail meats! It's very important to support our small meat processing businesses!
