Don't be afraid of cast iron. Sure if you're able to spend hundreds of dollars a pan, be kinda leary. But the coolest part of cast iron is that you can damn near run it over and then cook with it. For all the cast iron pearl clutchers out there. He is grinding down the old seasoning to bare metal... then we shall start over
