🎉 This summer, we’re celebrating 9 years of farm ownership. (Wow. That feels insane just typing out this post!)

It’s hard to believe that nearly a decade has passed since we took the leap and started this journey.

When we first began, we spent a lot of time researching how families buy and cook beef. That research led us to create our original Beef Box, a bundle of about 30 pounds featuring a variety of cuts that represented a true cross-section of the animal. Our goal was simple: help customers experience more than just ground beef and steaks while making it easy to stock their freezer.
Over the years, we’ve learned an important lesson that many business owners will understand: sometimes you have to pivot.

We’ve added new bundle options, expanded our offerings, started shipping, welcomed wholesale customers, began offering halves and whole beef opportunities and partnered with another local farmer to add pork proteins to teXga!

But while some things have changed, the heart of our farm remains the same.

The bundles we pack today are still packed by the same hands that raise the cattle. Every animal in our program is selected by us, cared for under our standards, and every order is prepared with the same attention to detail that guided us nine years ago.

As we celebrate this milestone, we’ll be sharing more stories about how the farm has evolved, what we’ve learned along the way, and a few behind-the-scenes looks at what it takes to raise premium farm proteins.

This Memorial Day weekend, we pause to remember and honor the brave men and women who have made the ultimate sacrifice for our country. Their service and sacrifice allow us the freedoms we enjoy every day, including the opportunity to gather around the table with family and friends.

As you observe this weekend, we hope your grill is full, your table is surrounded by loved ones, and your hearts are grateful for those who gave so much.

Bring on the rain! Looks like Memorial Day weekend may bring some thunderstorms of our neck of the woods, thus a solid comfort meal might be on your menu for the weekend!

A cozy, creamy pasta dinner packed with savory beef and rich parmesan flavor… perfect for a busy weeknight or rainy weekend meal. See recipe below 👇🏼 … ENJOY!

Ingredients:
1.5 lbs teXga ground beef
12 oz spaghetti
2 tbsp butter
1–2 tbsp minced garlic
1 small onion, finely diced
2 tbsp all-purpose flour
2 cups beef broth
1 cup heavy cream
1 cup whole milk
1 tsp Italian seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
1 to 1 1/2 cups freshly grated parmesan cheese
Optional garnish: chopped parsley or extra parmesan

Instructions:
- Cook spaghetti according to package directions.
- Reserve about 1/2 cup pasta water, then drain and set aside.
- In a large skillet or Dutch oven, brown the ground beef over medium heat until fully cooked. - Drain excess grease if needed and set beef aside.
- In the same skillet, melt butter. Add diced onion and sauté 3–4 minutes until softened. Stir in minced garlic and cook another 30 seconds.
- Sprinkle flour over the onion mixture and stir continuously for 1 minute to create a roux.
- Slowly whisk in beef broth, then add heavy cream and milk. Stir until smooth.
- Add Italian seasoning, garlic powder, onion powder, salt, and pepper. Simmer 3–5 minutes until the sauce begins to thicken.
Reduce heat to low and gradually stir in parmesan cheese until melted and creamy.
- Return cooked beef to the skillet, then add drained spaghetti. Toss everything together until fully coated. If needed, add a splash of reserved pasta water to loosen the sauce.
- Serve warm with extra parmesan on top.

*Optional Add-Ins
Fresh spinach
Mushrooms
Crumbled bacon
Red pepper flakes for heat

✨This reheats really well for leftovers too!

If you’ve been by the farm for a pickup, odds are you’ve met Dylan Rice. Over the last 3.5 years, Dylan has become such an important part of our team and he is like family to us.

Today, he’s marrying his beautiful bride, Abbie, and we could not be more excited for the two of them as they begin this next chapter together.
