The Perfect Pasta Alternative: Why I Love Cooked Spaghetti Squash
Spaghetti squash is one of the most surprising vegetables in the kitchen. It looks like a standard, large yellow melon from the outside, but when cooked, its flesh pulls away into long, golden strands that perfectly resemble spaghetti pasta.
It's an absolute game-changer for anyone looking for a lighter, low-carb, or gluten-free alternative to traditional pasta, and it's incredibly easy to prepare.

🍂 Fall Favorite: Delicata Squash
Move over, acorn and butternut! It’s time for the true hidden gem of the squash patch: Delicata Squash.
If you love roasted vegetables but hate the peeling, this squash is your new best friend.

Here’s why we are absolutely obsessed with it this season:
🌟 The Sweetest Squash
Delicata squash, also nicknamed the "Sweet Potato Squash," has a delicate, naturally sweet flavor that tastes like a hybrid of sweet potatoes, pumpkin, and sweet corn. When roasted, it becomes wonderfully tender and caramelized.

✂️ The Best Part: No Peeling Necessary!
This is the ultimate busy weeknight vegetable. Its distinctive striped skin (yellow/cream with green or orange stripes) is incredibly tender and fully edible. You just wash, slice, and roast—the skin adds a beautiful contrast and slight texture.
