Thank you all so much for a wonderful season! We have sold all our bulk beef (halves and quarters) for this year. We will still have individual cuts and sample boxes available. We are also taking reservations for halves for spring and early summer.

Here is a great way to reverse sear ribeyes!
In addition to your steaks you will need:
A couple of tablespoons olive oil or tallow
3-4 garlic cloves chopped
1 shallot chopped
12-14 sprigs fresh thyme or herbs of your choice
4 tablespoons unsalted butter
coarse salt and fresh ground pepper to taste
-Start by patting your steak dry and seasoning with salt and pepper
-Let the steaks rest in the fridge for 2-24 hours
-After it has sat, cook in oven preheated to 200° about 45 minutes. You want an interior temp of 100°
-Next heat your skillet over high heat until the oil just starts to smoke then add your steak and lower heat to med
-Cook on med about 2 minutes, moving the steak in a circular motion around the pan after about a minute.
-Flip your steak and cook another minute then add shallots, garlic, herbs and butter and baste with a spoon about 2 more minutes. Remove once the steak reaches your desired internal temp (120-125° for med rare).
-Enjoy!

I'm loving Sweet William this year! It's so bright and cheery, the butterflies and other pollinators love it, and I can actually smell it's fresh spicy scent! I lost almost my entire sense of smell to a certain illness a few years ago and it still hasn't come completely back. Any time I can smell the flowers I grow I get very happy.
