Feathered Farmstand x Teacher Appreciation Day

This is the second season I've been lucky enough to raise chicks hatched by students at our local elementary school. It was especially rewarding to have a chance to meet the students, check out their classroom and listen to the teachers speak of how the kids interact and observe the whole process. I brought home 7 chicks last Friday and my youngest daughter is in heaven to have babies again that she can hold.

This fall when you are purchasing eggs from me remember how much fun and gratitude went into our flock this season.

This is the part of COMMUNITY that I love.

This makes my heart sing.

This feels like a full life.

Hi! It's Shanna, remember me? Your favorite egg lady?

I know I've been quiet over here for awhile but for really good reasons, I promise. I'll be back to share some of my musings, what I've been doing and recipes soon!

Just wanted to pop on here really quick and tell you that the spring egg glut has arrived! I have fresh eggs by the dozens for pickup on Wednesdays, Fridays, and Sundays for $3.

I've shared this recipe a couple times this week for Chickpea Pasta. If you need more meatless meals in your life but still want that protein punch, this is your dish!

I can't stop eating it subbing in wilted kale from the garden instead of spinach. Drizzle just a bit of high quality olive oil and freshly grated parmesan before serving. I'm totally into this recipe. Check the comments for a link.

✨ Grow where you are planted.

It sounds so cliche, right? Two years ago I made an effort to add more fruits to our garden. In my head I wanted to wait until we had acres of land. I want a grape arbor and a lovely orchard and so much more. But I decided to start where I was, use what I had and do what I could - just like my favorite Arthur Ashe quote. So I added raspberries, blackberries and was even gifted an apple tree.

Last night I walked out into the yard and picked these beautiful berries that I would have missed out if I continued to wait. They still taste just as sweet.

Fresh greens from the garden call for a fantastic summer Balsamic Vinaigrette dressing.

Ingredients
2 tablespoons honey
1 tablespoon dijon mustard
1/2 teaspoon fine sea salt
1/2 teaspoon red pepper flakes
1 large garlic clove minced
1/4 cup balsamic vinegar
3/4 cup extra virgin olive oil

Instructions
In a small mixing bowl, whisk together the honey, balsamic, mustard, salt, pepper and garlic. Add the oil and whisk thoroughly to combine. Continue whisking until the dressing is fully emulsified.
Store in a jar with a lid and refrigerate. Shake well before serving.

Seriously, I know. I haven't posted much. Summer break started. Work schedules. My kids need me to fix 36 snacks a day, drive somewhere and pay for something. It's been lots of real life around here. 😁

Just look at how pretty my kale is and how cute those radishes are! The garden brings me joy. It's also the one place I can sorta hide from the kids.

Due to a scheduling conflict, the Feathered Farmstand won't be able to attend this Thursday's market in Englewood as planned. But please, go support all of the vendors and small businesses this week. I ❤️ the community spirit that Englewood Market is building, let's see it grow!

I have the same problem as you. I'm at the market and craving something decadent and sweet but I also don't want to wreck my food goals with poor choices.

I got you, babe.

It's strawberry season, it doesn't get any fresher than this. Drizzled with crafted chocolate, under 250 calories and right around 20g carbs. Go ahead, it's real food - treat yourself.
