Just a word to our new followers. Our eggs are fresh. Usually no older than 5 days from being laid. We leave the bloom on our eggs and because of that our eggs may not be as clean as you see in the market. The bloom is what protects the egg from things that are trying to get inside the shell, bacteria, etc. Because of the bloom, eggs can stay in the counter for several months and still be good. If you get a “dirty” egg, no worries. Just wash it in the sink and use it immediately. Otherwise, if not wanting to use it immediately but wanting “clean” eggs, wash it and put it in the fridge. That is what commercial eggers do. Wash, refrigerate and store. The catch is that by doing this the eggs you buy in the market are several months old. But that is what is required by the government to sell commercially. Let us know if you have any questions!
