I was intimidated by the idea of making my own pastrami at first. After a couple of conversations with my brother and some researching on what should go in my seasoning blend, I threw my first brisket on the smoker at the deli. When I took my first bite I got a tear in my eye and prayed it wasn’t a fluke, which it was not. Although it’s not healthy, it is probably one of my creations I’m proudest of. This is my pastrami platter from my brewery days with a side of Damn Good Mustard from Lake Superior Spice Co.

This is one I miss on a regular basis and it will definitely be resurfacing as a Forked Up Friday cheat. This is my Hot Italian pressed in a ciabatta hoagie with provolone, Black Forest ham, Genoa salami, capicola, pepperoni, banana peppers, black olive, red onion, Roma tomatoes, leaf lettuce, my oil vinegar blend with fresh garlic and herbs and a thin smear of mayo to keep the bun from getting watered down. This was one of my sandwiches on the menu when I was at the Sea Hagg Deli.

My Loaded Potato Flatbread from my days at the brewery. This has creamy garlicy mashed red potato’s for the base, cheddar cheese, charred onion, diced crispy bacon, Tod the Tater (When you live in FL and can’t get the real thing) and its garnished with scallions. It’s not super healthy but it makes my mouth water every time I see the pic and it was definitely a crowd favorite.
