Breaded Pork Cutlet Sandwich

Serves 1

Cook Time: 20 mins

Ingredients:

Protein:
4 thin-cut pork loin cutlets (about ¼ inch thick)
1 cup all-purpose flour
2 large eggs (beaten)
2 cups panko breadcrumbs
1 tsp kosher salt
½ tsp black pepper
½ tsp garlic powder
Oil spray

Torta:
4 telera rolls (halved and toasted)
1 can refried beans (warmed)
1 white onion (thinly sliced)
1-2 tomatoes (sliced)
1-2 cups shredded lettuce
2 avocados (mashed in a bowl with salt to taste)
Pickled jalapeños (sliced)
Mayo

Instructions:
Pork Cutlets:
Dredge the pork cutlets through the flour, coating both sides.
Dip the pork cutlets in the bowl with the 2 beaten eggs, coating both sides of floured cutlets.
Dip the pork cutlets in the breadcrumbs, coating both sides.
Cook the pork cutlets in an air fryer at 375 °F 10 minutes and then at 400 °F 5 minutes, until they reach an internal temperature of 145 °F, followed by a 3-minute rest.

Sandwiches:
Slice the buns in half and toast them on a griddle or skillet until lightly golden.
Spread warm refried beans on the bottom half of each toasted telera.
Add a layer of shredded lettuce and tomato slices.
Set the air fryer to 375 °F, add pork cutlets, and cook 10 minutes. Increase to 400 °F and cook 5 more minutes.
Place the air-fried pork cutlets on top after they reach 145 °F, followed by a 3-minute rest.
Add white onion slices.
Spread guacamole on the top half of each roll.
Top with pickled jalapeños (as many as you like).
Close, press lightly, and serve warm.

Taquito-Style Pork Picadillo Lettuce Wraps

Cook Time: 20 minutes

Ingredients
• 1 ½ lb ground pork
• 1 iceberg lettuce
• 1 small white onion (diced)
• 3 minced garlic cloves
• 2 Roma tomatoes (diced)
• 1 small potato (diced)
• 1 jalapeño (diced)
• 1 tsp cumin
• 1 tsp chile ancho or chili powder
• 1 tsp salt
• ½ cup water
• ½ white onion
• 1 poblano pepper
• 1 tbs cooking oil

Instructions
1. Heat oil in a pan and cook the pork until it is lightly browned and reaches an internal temperature of 160°F. Season with salt.
2. Stir in onion, garlic, and jalapeño. Cook 5 minutes until softened.
3. Add tomatoes, cumin, oregano, and chili powder or ancho powder. Cook until tomatoes break down.
4. Mix in diced potato, then pour in water.
5. Cover and cook 10 minutes until potatoes are tender. Uncover and reduce until thick.
6. In a separate pan, heat 1 tbs of oil.
7. Sauté sliced poblano and sliced white onion until soft.
8. Adjust salt if needed.
9. Assemble tacos: Spoon pork picadillo into lettuce leaves and top with caramelized onions and poblanos, and finish with a dollop of avocado crema.

Avocado Yogurt Salsa
Prep Time: 10 minutes

Ingredients
• 1 avocado
• 1 tsp salt
• Juice of 1 lime
• 1 cup yogurt
• ¼ tsp cumin
• ½ bunch cilantroz

Instructions
1. Combine avocado, salt, lime juice, yogurt, cumin, and cilantro in a blender.
2. Purée until smooth.

Ingredients
Protein: 1 ½ lb marinated al pastor pork
• 3 cups cooked brown rice (1 ½ cups uncooked)
• 3 cups fresh spinach (lightly chopped)

Instructions
1. Preheat air fryer to 375 °F.
2. Place marinated al pastor in a single layer.
3. Cook 12-14 minutes, shaking halfway, until edges caramelize and pork reaches an internal temperature of 145 °F, followed by a 3-minute rest.
4. Chop into bite-sized pieces.
5. Cook rice according to your preferred method.
6. Fluff with a fork and season lightly with salt and a squeeze of lime.
7. Toss raw spinach into warm rice to soften slightly.

For each meal-prep container:
1. Add ¾ cup brown rice.
2. Add ½ cup spinach.
3. Top with al pastor pork (about 4-6 oz).
4. Top with pineapple salsa.

Achiote Sauce
Serves 5
Prep Time: 15 minutes

Ingredients
• 1 ½ tsp salt
• 2 garlic cloves (peeled)
• 1 tsp cumin seeds
• 1 tsp black peppercorns
• ½ tsp whole allspice
• 1 tsp red chile powder
• ¼ tsp whole cloves
• ¼ tsp cinnamon powder
• 1 tsp Mexican oregano
• 1 ½ tbsp achiote paste
• Zest and juice of ½ orange
• Zest and juice of ½ grapefruit
• Juice of ½ lime

Instructions
1. Blend spices: Add cumin, peppercorns, allspice, cloves, oregano, garlic, and salt to a blender or mortar. Grind or pulse until coarse.
2. Add achiote paste and red chile powder.
3. Add orange juice and zest, grapefruit juice and zest, and lime juice.
4. Purée until smooth.
5. Add a splash of water if needed to loosen; season with more salt or citrus to taste.

Pineapple Salsa
Prep Time: 10 minutes

Ingredients
• 2 cups fresh pineapple (small dice)
• ½ red onion (small dice)
• 1 jalapeño (finely chopped)
• ¼ cup cilantro (chopped)
• Juice of 1 lime
• 1 tsp kosher salt 2 cups fresh pineapple (small dice)
