Taquito-Style Pork Picadillo Lettuce Wraps
Serves 5
Prep Time: 10 minutes
Cook Time: 20 minutes
Ingredients
• 1 ½ lb ground pork
• 1 iceberg lettuce
• 1 small white onion (diced)
• 3 minced garlic cloves
• 2 Roma tomatoes (diced)
• 1 small potato (diced)
• 1 jalapeño (diced)
• 1 tsp cumin
• 1 tsp chile ancho or chili powder
• 1 tsp salt
• ½ cup water
• ½ white onion
• 1 poblano pepper
• 1 tbs cooking oil
Instructions
1. Heat oil in a pan and cook the pork until it is lightly browned and reaches an internal temperature of 160°F. Season with salt.
2. Stir in onion, garlic, and jalapeño. Cook 5 minutes until softened.
3. Add tomatoes, cumin, oregano, and chili powder or ancho powder. Cook until tomatoes break down.
4. Mix in diced potato, then pour in water.
5. Cover and cook 10 minutes until potatoes are tender. Uncover and reduce until thick.
6. In a separate pan, heat 1 tbs of oil.
7. Sauté sliced poblano and sliced white onion until soft.
8. Adjust salt if needed.
9. Assemble tacos: Spoon pork picadillo into lettuce leaves and top with caramelized onions and poblanos, and finish with a dollop of avocado crema.
Avocado Yogurt Salsa
Prep Time: 10 minutes
Ingredients
• 1 avocado
• 1 tsp salt
• Juice of 1 lime
• 1 cup yogurt
• ¼ tsp cumin
• ½ bunch cilantroz
Instructions
1. Combine avocado, salt, lime juice, yogurt, cumin, and cilantro in a blender.
2. Purée until smooth.
