I whipped up a batch of this salad last night and I was so obsessed that I had it for breakfast this morning - it's a game-changer. Trust me on this combo, it's ridiculously amazing. Dice: 1 stalk Celery, 2 cucumbers, 1 apple of choice. Rough chop: 1 bunch fresh parsley, 2 cups arugula. Dressing: this is where things get real - 1 whole block of Parmesan, freshly shredded, juice of 2 large lemons, 1 cup avocado oil, 1/2 cup Mayo or plain Greek yogurt, 1 bunch of fresh dill, finely chopped, 2 cloves diced garlic, Salt & Pepper to taste. Combine and dress your salad. Top with candied pecans. If you're feeling fancy, add in some red pepper flakes, dried cranberries, green onion, spinach or micro-greens.
