Baking biscotti isn't easy, but when you bake a lot of biscotti you end up getting really good at it.

Other than working with the dough, one of my favorite things to do is cut the biscotti. I think I enjoy this so much because it really shows how far I've come as a biscotti maker. When I was getting started, I used to have to measure out each biscotti to make sure I could get a perfect 18. Now, I cut perfect 18s without a ruler!

WOW!! What a special day we had today at Biscotti di Francesca. The woman who inspired our company, Francesca Maggioncalda, was in the kitchen with us today. The biscotti being shipped to your house were literally made by Francesca!! It doesn't get more authentic than that!
