Flowers and fruit, invitations to mingle, from plant companions to their symbionts and beneficiaries.
For this year’s vintage of Millefleur: Sambucus, we combine elderflower and elderberry, in an act that bridges the seasons and delights in the full offerings of one our most beloved plant allies.
While harvesting elderflower blossoms, we can’t help but press our noses into the soft fluffy umbels. The delicate vanilla and custard like aromas are subtle, requiring close inspection for the full effect.
The berries, which we processed last fall, were spontaneously fermented into a dry and peppery wine reminiscent of Syrah, but with more earthiness. The dense pigmentation of the wine, diluted into the saison, has lent a burgundy hue to the blend.
We eagerly anticipate the final color and flavor of this brew once it’s had time to rest. Saison Millefleur: Sambucus should be available this summer. Stay tuned!
