One weekend of canning, plus 1 bushel of green beans put in the freezer

We always end up with the “scraps” that aren’t good enough to go to the market- but we try to be as “zero waste” as possible.
We are big on canning and preserving around here.
It was a long, hard weekend of preserving but it was worth it. 💪

🌱 A Quick Update from LPH Farm 🌱

First, we want to thank everyone who supports our small family farm. We truly appreciate each and every order!

To help us continue providing the freshest vegetables possible while reducing waste, all vegetable orders will require a 50% non-refundable deposit at the time the order is placed.

Because our produce is harvested fresh and is highly perishable, we occasionally have orders that are never picked up. Unfortunately, those vegetables often can't be resold, resulting in unnecessary waste and a loss for our farm.

Your deposit helps us harvest specifically for your order and ensures we can continue offering fresh, quality produce to everyone.

We appreciate your understanding and your continued support of local agriculture. Thank you for helping us keep fresh food on your table and reduce food waste. We look forward to serving you all season long! 🌽🥒🍅❤️

POV: you have 4847 zucchini and you refuse to waste any of them- not even the ones that accidentally hid and got to the size of a baseball bat.

If I wouldn’t have tasted it myself today I would have never believed that zucchini could taste like apples… but I’ll be daggone- it does!!
And while this isn’t safe to can, I did make extra to freeze. 😋
Zapple Pie Filling
- 5.5 to 6 cups diced, peeled, and deseeded zucchini
1 cup granulated sugar
1 cup brown sugar
2 tablespoons ground cinnamon
1 Tablespoon pumpkin pie spice
2 tablespoons flour
1.5 tablespoons cream of tartar
Pinch of salt
2 Tablespoons of lemon juice
