We have just ordered new lifter arms and we're waiting for those to arrive once they get here we will be taking off the roof reinstalling the lifter kit with arms placing the roof back on then we will move to the new floor installation then we will Plum everything in with new water hot water heater are Grill steam tables cooler and other necessities. I would estimate we are about two to maybe 3 months out from Full operation status. Stay tuned

A one pound 100% ragu beef Hotdog with stuffed jalapeno popper insides.
on top is hickory smoked bacon, sausage crumbles, jalapeno cowboy candy, onions, queso cheese, crunchy funyuns, onion rings, with a special signature sauce. Absolutely loaded.

Northern Hills Sushi

Taste Profile:

Northern Hills Sushi is a bold and indulgent culinary experience. Smoky, peppered maple bacon adds a subtle sweetness and crisp texture that perfectly complements the rich, tender layers of prime rib and tri-tip steak. The creamy garlic and avocado aioli provides a luscious, velvety finish with a hint of freshness that balances the savory depth of the meat. Every bite is a luxurious interplay of smokiness, umami, and creamy richness—a true celebration of hearty Idaho flavors.

Ingredients:

Peppered maple bacon strips

Prime rib, thinly sliced

Tri-tip steak, thinly sliced

1 ripe avocado

2 cloves garlic, minced

1/4 cup mayonnaise

1 tsp lemon juice

Salt and pepper, to taste

Instructions:

1. Prepare the Aioli:

In a small bowl, mash the avocado until smooth.

Add the minced garlic, mayonnaise, and lemon juice. Mix until fully combined.

Season with salt and pepper to taste. Set aside.

2. Assemble the Meat Layers:

Lay out the tri-tip slices in a rectangular shape to form the base.

Layer the prime rib slices evenly over the tri-tip.

3. Wrap with Bacon:

Place a strip of peppered maple bacon over the stacked meat slices.

Gently roll the layered meats into a tight log. Secure with toothpicks if needed.

4. Cook the Roll:

Preheat a skillet or oven to medium-high heat.

Sear the bacon-wrapped roll until the bacon is crisp and the internal meat reaches your desired doneness. This should take approximately 8–12 minutes, depending on thickness.

5. Serve:

Slice the roll into thick “sushi-style” pieces.

Drizzle or dollop the creamy garlic avocado aioli over each piece.

Garnish with freshly cracked black pepper or a small sprinkle of microgreens if desired.

Serving Suggestion:

Serve as a decadent appetizer for gatherings or as a centerpiece for a steak lover’s feast. Pair with a bold red wine or a hoppy craft beer to enhance the smoky, meaty flavors.

Spicy Pineapple Bacon Bomb Burger (Menu Price: $17)

Unleash bold flavor with this epic burger that’s as outrageous as it is delicious. It starts with thick-cut bacon woven into a criss-cross pattern, forming the foundation for a juicy beef patty that's stuffed with fiery jalapeños, creamy cheese, and crispy bacon bits. A thick slice of melty pepper jack cheese crowns the patty, followed by a sweet and tangy pineapple ring and another blanket of pepper sharp cheddar cheese. The bacon is then folded up and over the towering stack, sealing in all the flavor before it's grilled or baked to crispy, savory perfection.
