I am incredibly honored and grateful to be featured in the Summer 2026 issue of Gather North Idaho.

A huge thank you to Mark Griswold for taking the time to tell the story behind Carpe Diem Crêpes with such care and authenticity. You captured not only my journey from Brittany, France to North Idaho, but also the heart behind why I do what I do every single market day.

When I started this business, my dream was simply to share a little piece of home through authentic French crêpes and galettes. Seeing that story beautifully told in print is something I’ll always treasure.

Thank you to everyone who has supported Carpe Diem Crêpes over the years—our amazing customers, friends, family, and the North Idaho community. This wouldn’t be possible without you.

May and June are always our biggest months ever! 🇫🇷🥞
A huge THANK YOU to everyone who stopped by, supported us, and enjoyed our crêpes. We loved seeing so many familiar faces and meeting so many new ones. Your support means the world to us!
As we head into July and August, we’ll be back to our regular Saturday market schedule before our busy fall event season begins.

DID YOU KNOW?

There’s often some confusion about what defines an authentic savory crêpe, so we’d love to clarify.

Traditional savory crêpes from France—known as galettes—are made with buckwheat flour, not white flour. This isn’t just a stylistic choice; it’s a regional and cultural standard, especially in Brittany, where savory crêpes originate.

Because of the buckwheat batter and the way it’s cooked, a proper galette develops a lightly crisp exterior while remaining tender inside. That texture is intentional and part of what makes it distinct from sweet crêpes, which are softer and made with wheat flour.

We take pride in preparing our food in line with these traditional methods. While everyone has personal preferences, what we serve reflects authentic technique and ingredients.

We’re always happy to share more about the craft behind what we do—because great food comes from understanding its roots.
