Spokane, we're with you.

The fires burning across our region have pushed families out of their homes - and their pets out with them. SpokAnimal is sheltering a lot of those animals right now, and they are going through food fast.

We're collecting for them at the shop. Two ways to pitch in:

🐾 Drop off dog or cat food at Base Camp | 3510 N Government Way, Coeur d'Alene. Open 10am-5:30pm. You don't need to buy anything to come by.

Best table in North Idaho this weekend didn't have an address. It had a dock.

Friday we took the whole show to Hayden Lake for a private wine dinner benefitting Hospice of North Idaho - an organization that shows up for this community on its hardest days. Bud raised his paddle to make it happen. Barry and Suzanne donated the entire evening - their home, the food, all of it - so that every bit of it went to the cause. Chef CJ built the menu. We poured.

Guests got scooped up at the Hayden Lake Country Club for a happy hour cruise across the water, then stepped off the boat into tuna tartare tostadas waiting at the house. From there, a table set for a four-course tasting menu - smoked trout rillette, garlic shrimp, short rib au poivre, and an orange cake that had grown adults going quiet.

Before every Base Camp wine dinner, there’s this.

Bottles open. Glasses everywhere. Notes flying across the page. A lot of ā€œwait, go back to that one.ā€ A lot of tasting, talking, debating, and tasting again.

We sit down with Chef CJ and taste through every single wine together. He gets full creative freedom from there, building each dish around what’s actually happening in the glass. The acidity. The texture. The fruit. The earthiness. The weird little savory note that shows up ten minutes later and suddenly changes everything.

And here’s the part we’re pretty damn proud of: across 28 wine dinners, Chef CJ has never repeated a menu. Not once.

Every single dinner has been completely unique because every lineup of wines is completely unique. The food isn’t created first with wines plugged in afterward. The wines lead. The menu follows. Each dish is built to highlight what makes that particular bottle, vintage, vineyard, or place worth paying attention to.

Twenty-eight dinners. Twenty-eight completely original menus. Hundreds of wines tasted. And somehow, Chef CJ keeps finding new ways to surprise us.

This is the work behind the dinner.

And yes, sometimes the ā€œworkā€ looks a lot like this.

Oh, she’s the friend you absolutely want an invite from.

The 2024 Domaine Dominique & Janine Crochet ā€œLe Grand Chemarinā€ Sancerre doesn’t do boring plans. She texts at 3:47 with, ā€œOysters? Patio? I know a place.ā€ And suddenly it’s golden hour, someone has ordered a second dozen, and nobody is checking the time.

She’s bright, quick-witted and effortlessly put together. Think fresh grapefruit and citrus, a little pear, a whisper of elderflower, then that cool, chalky minerality that makes you immediately lean back in for another sip. She’s polished, but not precious. Sophisticated, but still the first one to kick off her shoes when dinner moves from the table to the lawn.

You spend time with her somewhere outside. A long table. Late afternoon sun. A plate of oysters, salty fries, maybe goat cheese and a baguette torn apart by hand. Music playing just loud enough. The kind of evening that starts with ā€œjust one glassā€ and ends three hours later with everyone wondering how the bottle disappeared so fast.

She comes from BuĆ©, one of Sancerre’s most celebrated villages, with five generations of family history behind her. So yes, she has pedigree. She just doesn’t need to talk about it all night.
