We did a thing today! The ability to mass produce at a very high volume will only help us continue to grow as a business. This beast will do 30 racks of ribs at a time! And don’t worry, the smoker is 500 pounds and has multiple cameras pointing at it from multiple locations, so should anyone attempt to mess with it, it’ll be all on video. We are getting excited. Hope to start plumbing next week. Things are moving fast!

Melissa and I spent the day painting at the shop. We decided that since we would be working for a few hours, we would load up the kettle grill and smoke some ribs. Then we decided to grab some brats and have lunch with our friends next door at AYB. So, we have made our first slabs of ribs at the new shop!

Pretty successful day. Finished the red area above the black wall, had some new LED fixtures installed. Thanks Jeff, for the fixtures, we appreciate you so much! Ronnie dropped off new wall baseboard, thanks Ronnie, you are appreciated! Rolled out the new window sign to take a look, finished the day with at trip to the Colfax Farmers Market, then attended the Colfax Main Street Business after 5 event. Now home to pack up and hit the road bright and early for Oklahoma for Caleb’s graduation!

BIG shoutout to Valerie Rae Hague-Renfro for painting our accent wall in the lobby/pick up room. Val, we appreciate you so much! Melissa requested a change order to add red glitter to the paint, and as the saying goes: happy wife, happy life, I said yes honey. Another BIG shoutout to Paul Flattery for the sign! We love it, and appreciate the support! Cosmetic work will continue, and soon we will begin minor plumbing and electrical upgrades that will allow us to install equipment.

We had a blast at the competition today. Weather was perfect! Cook…meh. Over cooked the money muscle so turned in pulled pork instead. Tried something way out of the box, even though it’s in the box, with chicken we decided to do our pulled chicken for comp turn in. We will await the results and see where we ended up by doing so. Thanks Bob Fox for coming out to help cook! We appreciate you!

HUGE NEWS….we got our permit approved today. We are bringing a prep catering kitchen and take out orders to downtown Colfax! Now, since this is a side hustle, and Melissa and I have regular careers, this will take some time to build out, get all of our licenses form the State of IOWA DIAL and be ready to open. We anticipate opening sometime in September, or October! This was why we re branded to Cooper’s BBQ! Yeah, here we go!

Was honored to be a part of Mikey’s 50th day bash! We made wings, pulled chicken, baked beans, jalapeño pineapple slaw, and Mac n cheese. We brought a few store bought sauces and made one of our own. Now, I’m extremely biased here, but it was all absolutely delicious!

First attempt at coconut shrimp tonight! It was pretty delicious. Even made a simple dipping sauce to go with it.
