It's Beet Season for sure. Dark red beets with green tops are easy to cook, healthy for you and a unique vegetable side dish. Simply dice and sauté the beet roots with a little olive oil and salt. Cook the beets til they are tender, soft or about 15 minutes. Tops will wilt down while cooking.
Also harvesting from our fields Red Leaf Lettuce, Spinach, Green and Red Kales, Collards, Swiss chard, Onions and Garlic Scapes (available for limited time). Garlic scapes are the top of a hardback garlic variety and used as you would a green onion or creating a garlic scape pesto.
