***Here's a tasty treat with Quail***
Bacon Wrapped Quail
14 servings - 150 Cal per serving - Heat @ 450ºF
Cut 1 jalapeño in 14 strips, & 7 slices of bacon in half.
Preparing Quail: Season each breast w/ salt, & top w/ 1 strip of jalap, & shredded cheese. Fold Breast, & wrap w/bacon. Secure with Toothpick. Place on baking sheet, & grill for 20 mins.
Meanwhile, cook some bacon in skillet - Med-High for several mins, then dice remaining jalap, & throw it in w/ bacon, along with minced shallots & garlic. Cook 2 mins, stirring occasionally.
Add bourbon, & 'carefully' set on fire, (using a stick lighter) to allow alcohol to cook off, then stir in maple syrup, mustard, & apple cider vinegar. bring to simmer for 1 minute, remove from heat, & stir in butter. Serve this sauce in a small bowl next to quail.

(Need: 2 Jalap, 1lb Blk Pep Bacon, 1 pkage quail breasts, salt, shed cheese, 1/4 cup minced shallots, 1 tbsp minced garlic, 1/4 cup bourbon, 2 tbsp ea of maple syrup, dijon mustard, & salted butter, then 3 tbsp apple cider vinegar)
